ABOUT US: The Natural Epicurean Academy of Culinary Arts is devoted to consciously cooking a health-supportive, plant based diet. We trains chefs in the theory and practice of meal planning and preparation in a wide variety of styles including macrobiotic, ayurvedic, classical vegetarian, vegan and raw foods. Students are also trained in the business skills and ethics necessary to prepare them for a rewarding culinary careers, whether your goal is simply cooking healthier meals for you and your family with our public classes or you are seeking professional chef training with a healthy twist.
RESPONSIBILITIES:
• Take lead in core BOH and store room operations including:
• Ordering- Per weekly instructor requisitions, order food from appropriate vendor for timely arrival
• Receiving- In alignment with orders placed, food and non-food items should be received to ensure quality, freshness, proper temperatures, etc.
• Inventory- Maintain ongoing inventory lists (excel) and par-stock counts for all food and non-food items, quarterly analysis of inventory valuation and product flow through rates; maintain logbook of maintenance and repairs requests
• Organization and cleanliness- Lead the efforts regarding store room organization and design, perform regular daily cleanup as needed; Keep fresh dates on perishables, rotate and organize inventory to assure product utilization • Processing/fulfilling instructor’s requisitions for classes- Collect, collate, and build order sheets from instructor’s class requisitions
• Supporting accounting through invoice/financial document retention
• Establish, maintain, and improve store room procedures in receiving, purchasing, storing, organization, requisition processing
• Maintain direct contact with purveyors/suppliers and expand or revise purveyor list
• Assist with building/kitchen maintenance and renovations
• Work with faculty for continual improvement in ordering • Provide operational support at Open Houses, public classes and other events per needs of campus director
• Delegation/distribution of leftover prepared foods and partially fabricated/processed foods
• Generate and revise prep sheets and grocery lists as needed for classes and events
• Assist in supervising and training student assistants for daily BOH task delegation (reset of kitchen, cleaning and putting away dishes, deep clean tasks, reorganization, consolidation, inventory checks, making stock, compost/recycling/trash)
• Assist instructors in preparing for classes, including day of and pre-prep, overnight, tables, chairs, opening up kitchen
• Perform other duties as required by school director or other staff, as needed
REQUIREMENTS:
• Minimum of 2+ year of food service or food industry experience
• High degree of product knowledge related to natural and whole foods, including identification, uses, storage principles, substitutions, seasonality, preferred brands and vendor relationships
• Ability to work FT with some flexibility for AM and PM class shift
• Understanding of word processing and spreadsheet software
• Exemplary communication skills, ability to work independently and as a team member
• Proven ability to work well under pressure to fulfill timelines
• Ability to lift 50 lbs. as needed and perform other functions regularly found in foodservice settings (light maintenance, daily cleaning and organizing)
