A study trip to the heart of Italy to learn about:
Slow Food, key components to the
Mediterranean Diet including how to cook, eat, and live the Mediterranean way for nutrition, health, and pleasure.
Cooking lessons at Florence’s top culinary institute, visits to the countryside to see
local farms, lectures on the Mediterranean diet,
Italian food gastronomy,
sustainable cuisine, dietetics and nutrition in the Mediterranean,
regional cuisine, meal planning the Italian way, and visits to the famous
Italian outdoor markets,

The program will be
hosted by one of the top culinary schools in Italy, the Apicius International School of Hospitality. Professors that specialize in the Mediterranean diet and other topics listed will accommodate us at Apicius.

Program Cost: $2600

About Me: My name is Rebecca and I will be your guide for your gastronomic adventure through the heart of Italy. With a B.S. in Nutritional Sciences and a Masters in Food Culture and Communication from UNISG (the slow food university), I have developed a very holistic viewpoint on food. Since I obtained my master’s in Italy, and took some of my first cooking classes of my life in Florence, Italy is and will always be a very special place for me. I designed this trip myself with an overarching goal in mind. I set out to create a gastronomic Italian adventure that delved deep into the Mediterranean diet, the Slow Food movement, and the delicious richness of the Italian food culture. This is a trip not for the faint of appetite. Italians like to eat, and are more in love with their food than any place I have ever visited. I hope you will join me on this adventure, expanding your knowledge of nutrition, Italian food cultures, your own food culture, and all of those peculiarities of Italy that you would not have seen if you were just a tourist looking in from the outside.
