Here atAFD we are a fast paced, small, diverse, farmstead dairy that is growing their cheese making operation and seeking a new member of the team. We are currently making a variety of cheeses including; bloomy rind, washed rind, blue, semisoft and hard aged cheeses. As a member of theArethusa production team you’ll have the opportunity to help with all aspects of thecheesemaking and aging process. You will gain an understanding of milk quality, milk chemistry, cheese making; starter cultures, coagulation, cutting, cooking temperatures, pH targets,hooping, pressing, brining and aging. This is a unique opportunity to be part of a growing, uncompromising, dynamic, artisanal cheese making team. Prior commercial cheese making experience isn’t necessary, though food-handling experience in a commercial setting or a food science background is strongly preferred. Most importantly, a willingness to learn about the craft and science of artisancheesemaking in a rigorous, hands-on setting is a must. Expectations/requirements:
- A one year commitment
- Able to lift 40lbs
- Able and willing to work all day on your feet
- Commit to a 40+ hour work week
- Prior food-handling experience
- Knowledge of food science and sanitation practices
- Passion for artisan cheese
- A year of hands-on cheesemaking education and experience
