Executive Chef for Cider Bar Wassail

Job Description We, the crew behind The Queens Kickshaw (Astoria, NY) and Cider Week NY, are opening NYC's first cider bar in the Lower East Side.

For this 74-seat restaurant, we're seeking a knowledgeable, meticulous, and enthusiastic Executive Chef who is also creative and talented in the kitchen. This is a unique opportunity to be at the forefront of defining a cider-centric cuisine.

Our anticipated open date is late Jan/early Feb 2015.

The food and drink concept:

- Cuisine loosely inspired by local/international cider-growing regions (regional/historical American, UK, Asturias, Basque, Normandy, Brittany)
- Food cooked with or to pair well with different regional varieties and styles of fine cider, perry
- Strong, complex, and deeply satisfying flavors to redefine non-meat cooking
- Extensive menu (100+) of cider & perry on draught, by-the-glass, and in bottle format
- Craft cocktail menu nods to apple/pear-based spirits, as well as a concise beer and natural wine selection

Initial responsibilities include:

- Pre-opening consultation (kitchen design and menu development)
- Set up recipe book, order sheets, PARS sheets, etc.
- Hire and train opening crew

Ongoing responsibilities include:

- Create/implement seasonal menus
- Partner with fine, local food and drink purveyors
- Plan and execute special and off-site event menus
- Work closely with beverage director on pairings and cocktail components
- Hire and train new staff
- Manage sous chef(s)
- Ensure health department compliance
- Manage food and BOH labor costs

Requirements:

- Prior participation in restaurant opening(s) a strong plus
- Strong culinary background and education
- Kitchen leadership experience
- Strong communication and organizational skills
- Strong mentoring and leadership skills
- DOH Food Safety Certificate
