Candidate requirements
-Strong working knowledge of butchery, meat grinding, sausage production.
-Minimum 1 year experience as butcher preferred but not required.
-Familiarity with all relevant equipment (smoker, bandsaw, etc.)
Responsibilities include:
-Breaking high volume of beef in addition to pigs
-Running meat program from butchery to storage to grinding & pattying-Hot dog / sausage / charcuterie production
-Working with farmer to arrange slaughter / delivery of sides
-As with our whole team, candidates must be passionate about food and cleanliness and be able to work as part of a dynamic team.
This will be a high-volume kitchen that requires everyone to be organized and confident with strong communication skills.
