Purpose: As a key part of the production and quality control team, BOH/Production Assistant must exemplify the values-driven standards of excellence of Xocolatl Small Batch Chocolate. Because all staff interact with customers, BOH must also share the personality and values of the company: friendly, down-to-earth, knowledgeable without pretension and with an eye constantly on how the potential customer is experiencing the company from all touch points.

The main function of the Production Assistant is to support the manufacture of Xocolatl’s product line, which includes: bars, drinking chocolate, trail mix, hazelnut spread, nibs & herbal cacao tea. The PA will also support future products not listed.

Roles & Responsibilities:

The Production Assistant works to support the Chocolate Makers in all aspects of production, primarily:

• Bean sorting
• Preparing chocolate molds for production
• Loading and unloading chocolate grinders
• Wrapping finished bars
• Packaging other finished products
• Preparing batches of drinking chocolate and other served items as needed
• Prepping ingredients
• Assist in receiving and unloading bean and other deliveries (must be able to lift 100lbs)

• Must have good situational awareness and work proactively to address production needs and any potential problems.
• Must be a team player and look for opportunities to improve efficiency and additional ways to support the chocolate production staff.
• Must keep the workspace organized.
• Cleaning each work station as the last action item when working in that space. Participating in periodic deep cleans of the entire work space.
• Assist in the cleaning and maintenance of equipment under the supervision of Chocolate Makers
• Maintain batch numbering system on all products so that all products can be traced back to ingredient lot numbers, source and date of manufacture.
• Follow production schedule
• Maintain food safety standards.
• Attend staff and individual meetings, potentially outside of regular shift schedule.
• Seek continuing education on bean-to-bar chocolate production and trends within the industry.
• Assist Front of House (FOH) as needed. When assisting in sales, engage with customers and determine their interest level in learning more about bean-to-bar & single-origin chocolate, providing samples as appropriate and helping them to make selections according to their preferences.
• Assist FOH to maintain a supply of samples that is attractive, hygienic, and not-out-of-date.
• Maintain Xocolatl’s standard of excellence, which is that every customer deserves, and is paying for, a high-quality item and that each and every item is a reflection of the brand.

The following roles and responsibilities will be added in as appropriate after meaningful training/discussion with management:

• Run guided tastings, sometimes paired with other vendors, at KSM or external locations.

• Receive training on roasting beans and tempering and molding chocolate bars.
