A country retreat of great natural beauty, Ohana was built in the early 1900s primarily as lodging for families with children at the many Vermont summer camps then operating around Lake Fairlee.

Known originally as Shanty Shane, the property was described in a brochure of the day as a “vacation camp for adults and families in the hills of the high country west of the Connecticut River, with cozy little houses built for two or more, and a main hall on such a height as to afford a view unsurpassed in New England.”

The property comprises twenty rustic guest cabins, six tent cabins, a handsome historic dining lodge, a classic red barn with a striking interior, and a variety of outbuildings on 112 acres of woods, fields and waterfront, with grand views of the Middlebrook river valley and the mountains to the west.

The quintessential Vermont family camp, Ohana is one of five renowned summer camps operated by The Aloha Foundation. The camps are the legacy of an adventuresome family who lived and taught in Hawaii in the 19th century, and returned to New England early in the 20th to establish a pioneering wilderness camp for girls in Fairlee, Vermont.

During week-long stays at Ohana, family campers swim, fish, canoe, kayak and sail in Lake Fairlee’s quiet waters; play tennis, volleyball and basketball on the camp’s own courts; try their hands at archery or a variety of arts and crafts; take hiking, biking, and sightseeing excursions through the New England countryside; or just rest and read in a rocking chair. Summer evenings bring campfires, music making, story-telling and s’mores; amateur talent shows and spirited contra dancing; expert talks on cultural and natural history; and other community entertainments.

Job description

Ohana is seeking a qualified, passionate, and inspirational Head Chef. The Chef’s primary responsibility is to take excellent care of our campers and guests by satisfying needs and exceeding their expectations.
 

The Head Chef oversees all kitchen operations with a small, dedicated staff for family camp, weddings, meetings, and other special events. Our meals, sourced locally, are delicious and creative. Primarily a family camp, Ohana is also a popular event venue and retreat space. The campus is 116 acres of rustic New England charm with views of the mountains overlooking Lake Fairlee. Our kitchen is big, bright, and open.

This full-time, year-round position begins in January. It includes a full complement of exceptional benefits. The Ohana campus is in operation May-October. During that time there is onsite housing available, as well as an abundance of outdoor activities and a positive, energetic group of staff.
 

 Primary responsibilities

  • Create and maintain a positive, engaging, and professional open kitchen atmosphere in a family-friendly environment.
  • Create menus that both pull at the heart strings and put into use local and abundant foods in fresh, flavorful, and robust ways while demonstrating knowledge of current food trends and the tastes of our campers and clients.
  • Prepare meals for 20-200 people with a variety of options for vegetarian, gluten-free, and other dietary restrictions.
  • Maintain superior food quality and sanitation standards in accordance with State and American Camp Association guidelines and regulations.
  • Hire and effectively manage all kitchen staff with involvement of the Director. Train, educate, supervise, motivate, and evaluate all kitchen staff on a regular basis. Create kitchen staff schedules and communicate staff responsibilities.
  • Assume fiscal responsibility for all food and labor costs—controls with inventory, cost of goods, labor, budgeting, and re-forecasting as needed, analysis of products, foods and labor usage, etc.
  • Develop and nurture relationships with local farms and producers to acquire the best ingredients.
  • Ensure proper receiving and storing of food and supplies.
  • Communicate and work with the Director regarding family camp, special events, and general feedback on the kitchen operation.
  • Communicate and work with wedding clients to develop wedding menus. Plan and execute a personal tasting for each wedding client and adjust menu as necessary.
  • Communicate and work with clients regarding special event food service. At times, instruct clients in culinary or other programs.
  • Foster a family-like atmosphere within the kitchen making our campers and clients feel like they are at home. Train staff members in this welcoming tradition.
  • Possess excellent food handling, food safety, and storage practices and excellent cleaning practices.
  • Other duties as assigned.


Basic position requirements

  • Excellent cultural fit for Ohana and the Aloha Foundation, passion for our mission and delivering it through food and food service
  • Culinary degree or equivalent
  • 5 or more years of experience in a head chef position
  • Experience managing, training, and hiring staff
  • Experience working with clients and vendors, large and small
  • Experience maintaining a balanced budget in a kitchen setting
  • Able to work on feet for duration of shift
  • Able to lift and regularly move at least 35 pounds
  • Comfortable using a computer, including email, Microsoft Office programs, and online purchasing sites
