PURPOSE: Oversee Commissary (CMS) production staff; coaching, developing, and taking corrective action as needed.  Commissary systems/efficiencies development, staff training, and production fulfillment. Ensure the highest level of food safety that exceeds health code and foster a safe and positive workspace for all.

 

REPORTS TO:  Commissary Kitchen Manager

 

ESSENTIAL FUNCTIONS:                   

  • Oversee all kitchen management duties in kitchen manager’s absence
  • Supervise, coach, and develop staff – enforce department policies and procedures
  • Oversee daily production – ensuring product fulfillment, assisting in production as needed
  • Hiring – participate in interviewing and on-boarding tasks alongside manager, or in absence
  • Scheduling – forecasting for needs, scheduling within budget, managing time-off requests
  • Employee development – participate in review and disciplinary process.
  • Oversee staff training – development, execution
  • Oversee buyer/receiver – Place orders for and receive product in their absence
  • Quality control – ensure finished product is consistent with department standards.
  • Monitor daily production – ensure deliveries are complete and fulfillment is always a priority, assist in production when needed to achieve 100% fulfillment rate.
  • Production planning - Look ahead and guide leads in production
  • Inventory – physical count, invoice entry, data entry
  • Strategy – new ideas, problem-solving, new procedures, efficiencies and production structure  
  • Financial functions – review purchase orders, invoices, credits, and waste logs
  • Monitor and properly care for kitchen equipment and notify management of any issues
  • Communication – act as link between managers and CMS staff
  • Foster and encourage a positive, safe, and supportive work environment
  • Complete other tasks and projects as assigned by CMS manager

 

QUALIFICATIONS:

  • 2+ years demonstrated experience in a leadership role
  • At least 3 years prior cooking or catering experience requires, 5+ preferred
  • Demonstrated ability to handle multiple demands in fast paced, high stress environments
  • Well-developed communication and interpersonal skills
  • Ability to handle difficult situations positively
  • Knowledge of safe food handling practices
  • Positive attitude and a willingness to learn
  • High attention to detail
  • Familiarity with natural foods
  • Proficient computer skills

 

 

ESSENTIAL PHYSICAL FUNCTIONS:

  • Ability to lift up to 60 lbs
  • Ability to work standing on a hard surface for an 8 hour shift
  • Frequent bending, twisting and stooping
  • Manual dexterity including simple grip with knives and use of a motorized slicer
