Since its opening in 2004, Nuvrei has been delivering high quality, sophisticated pastry to Portland. Chef / Owner Marius Pop has over 18 years of experience in traditional French Pastry, both in Portland and NYC.

Our kitchen is structured into 4 positions that sequentially build knowledge and broaden your skill set. By the time you reach the top level (M1) you will be operating as sous chef and well equipped to handle the ins and outs of running a kitchen.

Nuvrei uses the highest quality ingredients in all products and is a part of Cercle V - working exclusively with Valrhona chocolate. Each product is carefully crafted by hand; we are serious about pastry, coffee and maintaining the highest standard of quality for all of our shop's offerings.

We are in the market for a passionate professional to join our team full-time. If you’re hardworking, enthusiastic and committed to craft, we would love to have you on our team.  

Our primary goal is to cultivate and develop leadership. We want to see you grow, learn, and progress as a pastry chef and our built-in educational program puts you on a trajectory towards success.

The schedule for this position starts at 4:00am. Experience working early mornings is highly recommended.

Compensation is competitive and determined based on experience, performance and position held.

Health care benefits are available for full-time employees after 3 mos. PTO accrues after 1 year of employment.

The Open Position:

M4 - Entry level position where we help you develop a strong foundation to thrive in our kitchen and beyond.

  • Piping, shaping, rolling
  • Focuses on finishing details of product
  • Learns the pace & attention to detail unique to our company

Duties include:

  • Assisting the baker with all aspects the morning bake
  • Piping, shaping, & rolling
  • Wholesale deliveries
  • Scaling & mixing both yeasted & quick doughs, glazes, fillings, washes, etc.
  • Preparing mise en place items & garnishes
  • Monitoring par inventory levels at work station
  • Using proof boxes, ovens, 20 & 60qt mixers knowledgeably and meeting safety standards
  • Communicating clearly with baker and production staff
  • Consistent punctuality & attendance
  • Maintaining Nuvrei’s quality standards & quality control
  • Follow all Nuvrei company policies

Qualifications:

  • Current OR Food Handler’s Card
  • Current OR Driver's License / clean driving record
  • 1 year commercial baking experience
  • Knowledge of lamination processes, dough proofing, handling & mixing
  • Strong attention to detail
  • Basic math skills
  • Understand written & verbal communication
  • Previous experience working nights / early mornings
  • Ability to work standing for long periods of time
  • Ability to be led and learn quickly
