We do our own added-value processing, and direct market the meats & eggs that we raise to a local customer base.
Meat cutting takes place in our on-farm Butcher Shop, which specializes in a variety of fresh cuts, fresh sausages, smoked meats, and dry cured meats. Our butcher shop is run by a crew of three here during the busy season. The farm chores and livestock care are managed by 2 people.
2019 will be our 7th year in production (time flies!), so we’re still building infrastructure & systems on the farm, but there is a solid foundation in place.
Farm owners are Asa Thomas-Train (age 36) and Courtney Grimes-Sutton (age 35), and we both work full-time on the farm alongside the rest of the crew. Asa's background is in Geography, Trail-building, and Stone Masonry. Court's background is in Farming, Metal Work, and Butchery. Asa grew up here and knows the mountains well. Court grew up in MA and moved up here from the Hudson Valley in 2009. We love it here.
Court runs the Butcher Shop and Asa manages the livestock out in the fields.
Our farm is part of an awesome community in the eastern Adirondacks, where small ag is becoming an important part of the economy. This region is very rural, mountainous, and beautiful.
We are processing beautiful meat animals that were raised right here on the farm!
We prepare 4-5 hogs, a couple lambs, and a steer each week for Summer markets. We make a variety of fresh sausages, and we've recently added routine salami makes to the mix. A full gamut of smoked meats, fresh cuts and grinds are all produced weekly.
This job basically entails choreography among the shop team to get our weekly processing done in time for weekend farmer's markets. The week begins on Tuesdays with whole animals. Personal responsibilities in the shop are sorted out based on experience and tendencies among the crew - but we all do some of everything. The work requires focus and drive and efficiency, but our work environment is pretty relaxed.
Keeping the shop and our equipment clean and sanitized, maintaining necessary records, quality control, and customer service in the shop are all part of the job. If you have experience, product development is fair game as well!
Also - the whole farm team joins forces on Thursday evenings in the Farm's Taco Truck at our friend's brewery across the street for a few hours during our weekly Taco Night.
This job is 5 days/week. Looking for a minimum stay of mid May - December, though year-round work is an option.
We enjoy team lunches in the farmhouse or outside with the whole MCF crew. Occasionally the shop team is drawn outside to help with herding cattle down the road or some task that needs many hands.
