Job descriptionCommercial kitchen responsibility providing the overall leadership and direction on daily production, inventory and distribution.
- Develop and drive production schedule based on retail and wholesale demand.
- Hire, train and develop departmental personnel by assessing performance, setting goals, providing coaching and counseling.
- Develop and manage production budget and oversee food and labor cost management across all production departments. Forecast, track and manage staffing, operational and production needs with respect to budget. Review and influence monthly P&L.
- Manage the sourcing of high quality ingredients, vendor management and ensure product quality and consistency through oversight and testing protocols.
- Work with product development and refinement of current products. Oversee new product launches.
- Develop and maintain QA and food safety protocols.
- Manage all departmental maintenance activities; maintain equipment in a safe, efficient, and cost-effective manner.
- Identify, recommend and execute continuous improvement initiatives in the production operation.
Reports to: CEO.
Qualifications:
- 5+ years of culinary experience in pastry to include some knowledge of ice cream production and team management.
- Strong multi-tasking and attention to detail skills.
- Team leader, builder and player.
- Supply chain, forecasting, budget and P&L experience.
- ServSafe certified.
Salary $80-100K, + 7% bonus, company health, dental, vacation.
