For more than forty years, Chez Panisse has helped to redefine the American diet by creating menus based on three simple principles: freshness, locality and seasonality. Its success is rooted in the belief, in the words of Wendell Berry, that “eating is an agricultural act”, with social and ecological consequences that describe the kind of people we choose to be.
Alice Waters and a small band of friends founded a neighborhood bistro called Chez Panisse in 1971. They named it after one of the characters in Marcel Pagnol’s 1930’s film trilogy, Marius, Fanny and César, that documents the lives of two Provençal families on the Marseilles waterfront, as an homage to the honesty, sentiment, and humor of these classic movies. Alice has said from the very beginning that she and her partners tried to do things the way they would do them at a dinner party at home. The dining room has always offered only one fixed-price menu of three to five courses. The menu changes every night and each one is designed to accent the very finest ingredients of the season.
Alice and Chez Panisse have become convinced that the best-tasting food is organically grown and harvested by the people who take care of land for future generations. The quest for such ingredients has largely determined the restaurant’s cuisine. For years, Chez Panisse has shown diners the pleasures of vegetables just out the garden, fruit right off the branch, and fish straight out of the sea. In doing so, Chez Panisse has stitched together a patchwork of more than sixty local suppliers whose primary values, like those of the restaurant, are environmental harmony and optimal flavor.
Chez Panisse has long been at the vanguard of the movement for local farmers’ markets. For many years, it has actively supported the Edible Schoolyard at Berkeley’s Martin Luther King Junior Middle School. This project directly involves all students directly in planting, gardening, harvesting and eating, with the goal of teaching respect for each other and the planet, and of illuminating the vital connection of food to their lives.Job Description
Seeking a service oriented individual with excellent language skills and phone manner.
The position requires telephone multi-tasking and courteous, consistent, policy-supported response skills. Ideal candidates would have extensive experience in the hospitality industry, and be familiar with Resy software. A flexible schedule is required- nights, and weekends are a must.
