Chef Stupak says “As a cook, you are constantly faced with a simple but profound decision. What do you want to cook? By making that decision you are choosing everything, who you cook for, who your friends are, where you travel, what you taste, see, smell, touch, hear and think about every day.” Just because a way of cooking has been around for centuries doesn't mean it can’t be new to us. We will constantly look at Mexican cuisine with passion, objectivity and a fresh perspective.
