Company description Amber Waves Farm is entering its eleventh season as a mixed vegetable farm on the easternmost end of Long Island. The farm owns and leases a total of 25 acres on three fields, raising 15 acres of vegetables, 10 acres of grains, and a small flock of laying hens and ducks. The farm’s production serves a 180-member CSA and an on-site retail farm market, a nearby weekly farmers market, and restaurant wholesale accounts. Amber Waves is located in downtown Amagansett and is a popular destination for families and foodies who visit the farm to shop in the retail market and tour the fields. The farm is deeply involved in intensive educational work with nearby schools and the public, which includes frequent field trips, tasting tours, demonstrations, and public events at the farm. 
 

Our on-farm commercial kitchen inside our market functions as the hub for cafe and bakery service for breakfast and lunch using almost exclusively what is grown on the farm. This hyper-local and ever changing menu based on what our farmers harvested the day before.  We are looking to scale up our team to meet the demand of our rapidly growing customer base while preserving the ethos of a true farm-to-table and seasonal eatery. We focus heavily on a predominantly plant-based and minimal food waste kitchen, working towards having the lowest impact on our environment. Amber Waves Farm is a fun, fast-paced work environment where we champion good ideas, hard work, common sense and follow-through. Each day we work towards improving our methods, expanding our knowledge base, and becoming a better all-around farm + market + kitchen. The entire Amber Waves Farm team of about 30 people consists of not only farmers, but also educators, retail market, and kitchen staff.

Job description

The Assistant Chef will work directly with our head chef, pastry chef, and head farmer in creating menu items that utilizes the crops grown on our farm or our neighboring farms. This position starts in the morning and allows for evenings off. This is a unique position to not only learn about the growing, harvesting and utilization of food, but also to have direct influence on the food and vision of this kitchen. This position is ideal for someone who is passionate about promoting organic, self-grown, and incredibly seasonal food. This a rare opportunity to learn about a start-up kitchen and the development of an up-and-coming food destination, while allowing for your  own culinary influences on the creations that come off the farm and out of our kitchen! 
 

Job Responsibilities:

  • Working creatively and closely with Chef and spending time out in the field learning about our produce
  • Menu and recipe development and scaling
  • Working directly with head chef and farmer in ordering/receiving
  • Working with and overseeing work done by prep chefs and line cooks
  • Create and execute our line of value added and pre-made menu (soups, sauces, ferments)
  • Some management of the kitchen staff and scheduling

 

Desired Qualifications:

  • Kitchen experience (1-2 years minimum)(classic culinary education is not required)
  • Knowledge of kitchen equipment and machinery
  • Efficient and skilled knifework
  • Passionate about organic, farm-to-table, plant-based seasonal food with emphasis on nutrition
  • An understanding and respect for sustainability and food-waste reduction
  • A desire to be constantly learning new things
  • Creativity and excitement in developing a menu that is constantly rotating based on seasonal produce availability




 

Compensation this position is : hourly, $15/hr + Application instructions
