Amber Waves Farm is a fun, fast-paced work environment where we champion good ideas, hard work, common sense and follow-through. The physical nature of the work is both challenging and rewarding, as is the considerable time we farmers spend interacting with the public both on and off the farm. The entire Amber Waves Farm team of about 25 people consists of not only farmers but also educators and retail market and kitchen staff. The field crew typically consists of 9-12 people, including first and second year Apprentices, a Crew Leader and Field Manager, the farm’s full-time founding farmers, and part-time summer help. Our on-farm commercial kitchen is a vibrant and exciting hub that prepares food for our cafe, on-farm events, and delicious take-a-way food from our market. The assistant pastry chef will work directly with our head pastry chef, head chef, and head farmer in creating menu items that utilizes the crops grown on our farm or our neighboring farms, including locally grown and milled wheat. This is a unique position to not only learn about the growing, harvesting and utilization of food. This position is ideal for someone who is passionate about promoting organic, self-grown, and incredibly seasonal food. This a rare opportunity to learn about a start-up kitchen and the development of an up-and-coming food destination, while allowing for your own culinary influences on the creations that come off the farm and out of our kitchen! This position also allows for evenings off, but starts early in the morning.
Responsibilities:
- Work creatively and closely with the head pastry chef and spending time out in the field learning about the produce grown on our farm
- Menu and recipe development and scaling
- Work directly with head pastry chef and farmer in ordering/receiving
- Work with prep chefs
- Some management of the kitchen staff and scheduling
- Oversee daily baking operations
Desired Qualifications:
- Kitchen Experience (1-2 years minimum, culinary education is not required)
- Have some experience working with large production
- Knowledge of kitchen equipment and machinery
- Efficient knifework
- Passionate about incorporating seasonal food into baked goods
- An understanding and respect for sustainability and food-waste reduction
- A desire to be constantly learning new things
- Creativity and excitement in developing a menu that is created from local and seasonal foods
