When creating Ammazza, we wanted to combine 2 things people enjoy the most – pizza and beer – and put them in an open, neighborhood friendly space that invites people to come and go as they please. With a vast selection of over 30 well thought out beers, we then set out with an ambitious goal – to create the best pizza money could buy.

We worked with the simple truth that people recognize quality, so we decided to create a pizza using the best ingredients. Instead of limiting ourselves to Neapolitan style or New York style pizzas, we had to combine the characteristics we liked from each style to create a truly unique pizza experience.

We make our dough with just Caputo 00 flour, fresh yeast, water and sea salt and rises for 3 days before baking at close to 900 degrees in our 2 Acunto wood fire ovens. Unlike true Neapolitan pizzas, we did not want to limit ourselves to ingredients that come from a single region in Italy. Though these can yield a great pizza, we found that in order to reach our goal, we had to admit that there were more fresh and more flavorful ingredients from other regions of the world – especially in our own back yard! As a result, we make our own fresh mozzarella daily and use meats cured and prepared by the Spotted Trotter in Kirkwood.

Job description Pizzaiolo/Forni

Pizzaiolos are expected to be proficient in the art of pizza making including stretching dough and making pizzas quickly. Working through the rush effectively is key at this position and will require focus throughout the shift. Pizzaiolos will read and prepare their own tickets with limited oversight therefore it is important to be attentive to any modifications or holds placed on items. 

Forni
The relationship between the pizzaiolo and forni is united.  One cannot properly function without the other. The role of the forni is to cook every pizza consistently while maintaining the ovens' temperature, which should stay between 820-860 degrees. Ability to work with a wood fire oven and ensure proper cooking of every pizza is essential. Compensation this position is : hourly, varies DOE, $10.00 - $12.00 Application instructions
