SOUS CHEF POSITION AT EXCITING CHELSEA MARKET OYSTER BAR

We are looking for a hospitality and culinary professional with experience and dedication to quality.

The Cull & Pistol Oyster Bar in Chelsea Market is hiring a Sous Chef to lead our team in a well-known, fast-paced kitchen. We're looking for a strong leader and a great cook, with experience in kitchen administration and recipe development. Must be a responsible and hardworking individual who truly understand hospitality and the importance of impeccable food in a fine dining atmosphere.

Our Sous Chef responsibilities include:
• Assisting Executive Chef with kitchen operations - running prep kitchen, staff management, expediting
• Menu development - planning and implementing including recipe writing, costing, tasting, and sourcing
• Recruiting and training, interviewing candidates, mentoring cooks, and evaluating staff performance
• Sourcing ingredients, ordering and inventory control
• Using business analytics software to understand sales trends for menu planning and inventory control
• Other projects and assignments, as needed.

The ideal candidate should have:
• 5+ yrs professional kitchen experience, 2+ yrs management experience
• Working knowledge of Microsoft Excel
• Ability to multi-task and manage multiple projects at once
• Own sharp knives and kitchen tools
• Willingness to learn and retain knowledge from Chefs
• Good time management and communication skills
• Ability to work in fast-paced environment
• Understanding of NYC health department codes and conduct
• 2 professional employment references
