Opening April 2019, Three Owls Market is a new concept that seeks to revive the beloved neighborhood prepared foods market. We’re elevating this tried-and-true model with health-minded, inspiring food and thoughtful, exciting design, while maintaining the warm neighborly vibe and hospitality to match.

This ideally located space on the border of the West Village and the Meatpacking District will serve breakfast, lunch, and dinner, either for takeaway or dining-in with counter service in our 24-seat café. Driven by the best locally and responsibly sourced ingredients, the food will be focused on American and Mediterranean cuisines, with full coffee, beer, and wine service along with a retail market.

Job description We are looking for a talented, motivated sous chef to be a leader in our brand new kitchen, helmed by a management team with experience at Chez Panisse, Tartine, and the Food Network. This role reports directly to our Head Chef, and will be overseeing a team of cooks and large volume production for three meals a day and catering. The ideal candidate has a love of seasonal cooking, presentation, and recipe development, and strong operational skills. Most importantly, they're ready to tackle an opening, and welcome the challenges and rewards of a new business. 

RESPONSIBILITIES INCLUDE:
  • Managing a team of cooks to execute a large menu of rotating prepared foods, ensuring highest standards of taste, consistency, and presentation are met
  • Mastering our rotisserie and combi ovens for maximum efficiency and food quality 
  • Assisting Head Chef with ordering, food costing, and inventory management 
  • Developing new, seasonally inspired recipes 
  • Developing procedures and protocols for daily production of our menu
  • Assisting Head Chef with overall kitchen operations for 
 

Requirements:

  • 3+ years proven cooking experience, including experience as a line, restaurant, or prep cook
  • Excellent understanding of various cooking methods, ingredients, butchery, equipment and procedures
  • Strong leadership and communication skills
  • Strong familiarity with food costing and inventory management
  • Accuracy and speed in execution
  • Knowledgeable with food safety guidelines
  • Ability to work well in busy venue and fast-paced environment
  • Culinary school diploma preferred
