Cheese Department Manager

 

The Cheese Department Manager is responsible for all things dealing with cheese, charcuterie, and beer sold in the store. The Cheese Manager must be attentive to detail, able to manage a group of assistant cheesemongers and excellent with customers.

 

Primary responsibilities:

  • Establish and maintain a positive work environment following the rules laid out in our company handbook
  • Meet and exceed our sales goals for the Cheese and Charcuterie Department, and Beer Department, as decided upon by General Manager on a quarterly basis
  • Sourcing cheese and charcuterie from local purveyors and wholesalers. Developing relationships with them to negotiate a fair price, beneficial for both the farmer/wholesaler and Provisions
  • Order cheeses and charcuterie accordingly using our inventory system (RMS) to track sales
  • Set all pricing based on cost of goods and labor to produce
  • Update POS system with correct item and pricing
  • Update PLUM with correct item and pricing, including ingredients when necessary
  • Create signage for the display case and all items sold in the Cheese Department
  • Maintain the display case, properly rotating cheeses and meats as needed to keep customers interested and excited
  • Receive all major deliveries, checking for damaged, short, out of date or missing product and promptly communicating any problems to vendors
  • Maintain refrigerated and dry storage areas area to be clean and in good working order
  • Maintain the quality of cheeses and meats to the best standards possible
  • Make sure all equipment used by the cheese counter (ie: knives, meat slicer, cheese slicer, cutting boards, uniforms etc) is in good working order. Communicating with the Store Managers to solve any equipment problems
  • Manage cheesemongers: training in all aspects of the counter and following up to make sure standards are being maintained. Making the department schedule. Assisting the GM in hiring/firing decisions when necessary. Overseeing that department staff are properly maintaining the cheeses and meats, keeping waste to a minimum
  • Manage the Beer Buyer to ensure proper product is being ordered, margins are met, cold case is appropriately merchandised and organization of back stock area is maintained
  • Taking and fulfilling special order request from customers
  • Work directly with the Catering Manager & Marketing Director to build & improve catering department as well as promote product on blogs, demos etc.


 

The Cheese Department Manager reports directly to the General Manager.

This is a salaried position for minimum 40-45 hours per week

Compensation this position is : salaried, varies DOE, $45,000.00 - $55,000.00 Application instructions
