Butcher and Charcuterie Maker Left Bank Butchery

  • Date Posted July 16, 2019
  • Location Saxapahaw, NC
  • Category Culinary
  • Job type Full-Time
Company description Left Bank Butchery, featured on Michael Pollan's Netflix Original Series Cooked, is a progressive whole animal butcher shop. Our shop is built on the foundations of supporting local agriculture, providing healthy food for our community, and educating and engaging our customers in the many aspects of sustainable farming and whole animal butchery.

Our mission is to provide our customers with locally sourced, sustainably raised pastured meats of the highest quality. We will never compromise on this vision.

Everything that we do begins with our unwavering belief in sustainable agriculture. We work only with local, progressive, polyculture farms. Antithetical to the industrial meat industry, all of our practices are rooted in:
  • Environmental responsibility and sustainability
  • Respect for the farmers, animals and the land upon which we thrive
  • Helping our customers to cook healthy, delicious meals at home
  • Utilizing every cut of the animal, which results in 0 waste

We are lucky to be working closely with our farmers. Almost all of the meat in our shop comes from  farms within a 15 mile radius. These farms raise heritage breed livestock that has been chosen for suitability to the local environment, as well as excellent genetics. Cane Creek Farm, which supplies us pork, is less than a mile away. Being truly local isn't simply about proximity, however. It also means helping to set the standards to which the community should aspire. This is why you will see Cane Creek Farm featured in the New York Times, and is also why the water in the creek that runs through the farm that supplies us beef leaves the farm cleaner than when it entered. The latter is something that sadly is something almost unheard of in modern livestock farming.

Many of our customers count on us to help with weekly meal planning, and we pride ourselves on doing so for almost any budget or occasion. We love working to bring healthy, local, delicious food to the dinner table at home. Our case is always stocked with fresh beef and pork, as well as house made sausage, bacon, and assorted charcuterie. Many of our customers share our love of slow, good, wholesome and (most importantly) real food, and we strive to support them in this way.

Everyone at Left Bank Butchery is proud of the shop as well as our craft of butchery. We love what we do, and feel quite fortunate to be able to work in an environment that supports our passions and ideologies. Job description We are a whole animal shop and make all of our charcuterie in house. We are also a small shop and don't believe in separate "front" and "back" of houses. We're looking for a dynamic, hardworking member of our team who can contribute to the food of the shop, the efficiency of the shop, and the overall customer experience. Our staff needs to be able to talk about cooking with customers, and also sustainable agriculture. This is perfect job for someone interested in all the facets of sustainable meat production, someone who loves cooking but maybe wants a slower pace from restaurant kitchens. We work in a badass little community, and in order to really enjoy the job, our guess is that you must enjoy this town too. Let us know if you're interested.
