Job description

The Kitchen Manager is an integral part of the Mamacitas team. They are responsible for the design, supervision, and general execution of all food aspects of the business. In addition to food prep and cooking, the Kitchen Manager will maintain and monitor kitchen systems, our food inventory, and oversee compliance on safety and cleanliness standards. Of deep importance to this role is the desire and ability to manage our kitchen staff efficiently and with care. The person in this role works collaboratively with others throughout many parts of the Mamacitas team. The food we serve is more than a product, it is a way to tell stories, connect with others, and grow the power of those who make it; this role necessitates someone who holds these values.

Cooking and kitchen work (50%)

  • Maintaining the back of house standard operating procedure(s)
  • Tracking inventory and creating shopping lists/purchasing as necessary, and then receiving the deliveries
  • Managing the execution of events: developing the shopping list, shopping, and preparing the delegation of duties for BOH staff beforehand
  • Maintaining relationships with purveyors
  • Cleaning and organizing the walk-in & day storage, managing general food safety and sanitation

Staff collaboration and supervision (25%)

  • Managing BOH staff in kitchen: Opening/closing, breaks/staff meals, delegation of duties
  • Managing BOH staff in scheduling: Scheduling, maintaining current staff list and availability, leading trainings
  • Working closely and meeting regularly with others from the Production team to plan events, discuss staffing, etc.

Creative Direction (25%)

  • Creating, writing, and costing new recipes
  • Quarterly/season development of new menu ideas and package offerings
  • Keeping recipe binder up to date (e.g. varying portions and yields) 
 

Qualifications

  • Commitment to Mamacitas values of dismantling oppression and growing liberation
  • Proven ability and experience in the management of a kitchen environment, especially catering (minimum 3 years experience)
  • Proven experience in food purchasing, recipe creation, menu building, and inventory management, and skillful documentation
  • Familiarity with kitchen sanitation and safety regulations
  • Familiarity with Google suite (Google docs, sheets, calendar, etc.)
  • Punctuality and respect for others’ time and energy
  • Flexibility to work during mornings, nights, and weekends
  • A valid driver’s license and ability to transport oneself to kitchen shifts and events
  • Willingness to accept and give critical, constructive feedback and desire to grow in their work
  • Perform quality work within deadlines with or without direct supervision.
  • Work effectively as a team leader, with an ability to give clear and compassionate instruction and feedback as someone helping build the skills of others
  • Strong sense of responsibility and initiative
  • Work independently while understanding the necessity for communicating and coordinating work efforts with other employees and organizations.
 

Anticipated Working Conditions

The physical demands and work environment include: working in a kitchen, standing and cooking for hours-long shifts; working events at various hours of the day, often including early mornings, late nights, or weekends may include occasional outdoor weather conditions; lifting and moving catering/cooking equipment, large quantities of food, other supplies, sometimes weighing up to 50 pounds. Driving or transporting oneself to and from the kitchen and events is a need for this position. This role will also entail working in/around noisier spaces, such as at events and in kitchens. Reasonable accommodations will be made for this position.

 

Work Hours and Compensation

This is a full-time (40 hours/week), exempt position. The salary range is $55,00-$65,000 dependent on experience. Most work will be based between the San Antonio and Fruitvale Districts of Oakland, CA though travel for offsite events or staff meetings is to be expected. Benefits include 20 days of paid time off a year, 10 personal/sick days, and 8 paid holidays. Mamacitas is unable to offer health and dental insurance at this time but would like to offer this in the future. Mamacitas is in the process of enrolling in the CalSavers program, a voluntary, low cost, portable retirement savings vehicle with professionally managed investments and oversight from a public, transparent board of directors, chaired by the State Treasurer.
