Jasper Hill Farm began as a model for value-added production; turning milk into high value product achieved profitability for a small-scale farm.  Pigs have always been a part of this story with their appetite for the by-product of whey and batches of cheese that don’t make the grade.  We have finally realized our vision of applying the value-add strategy to pork with a small, USDA inspected facility near the original farm.  Dry curing meat concentrates flavor and reveals the complexity of a place-based product in a way that complements our working landscape and our tables.

Job description
Position Summary

Jasper Hill is looking to fill an exciting position overseeing our pork salami production operation.  This hands-on position will require familiarity with a number of meat industry related skills. The ideal candidate will have experience in food safety/HACCP, have a familiarity with fermented foods, and have the ability to manage people.   This is an exciting time to join our team, as we continue to build systems and lay a foundation for future growth.

Essential Duties and Responsibilities

  • Source pork from local farms
  • Manage coordination with slaughterhouse
  • Participate in day to day production
  • Manage HACCP/Food Safety plan (labels, inventory, process/quality management)
  • Manager responsibility (scheduling, hiring, training, coaching staff etc…)
  • Develop new products (R&D)
  • Forecast production
  • Basic sales and invoicing
  • Preventative and basic facility maintenance

Knowledge and Skill Requirements

  • Food/Meat Industry Experience
  • HACCP Training
  • 3 years of management experience
  • Salami/Cheese/Fermented food production experience
  • Familiarity with pig farming systems
  • Pricing/Bookkeeping/Business experience
  • Excellent Communication Skills
  • Focus on Quality

Physical Requirements

  • Able to stand all day; able to bend, kneel, and lift 50 pounds
