Hurricane is seeking an experienced Galley Director/Head Chef for the entirety of our island season, April 15-October 15. This island-based position is responsible for the organization and management of the campus’ galley and works cohesively with their own staff, the Program Manager, and Garden staff to prepare and serve 3 meals a day for an island community averaging 40-60+ people. In addition to the daily meals, being able to plan and execute periodic special events such as Farm to Table dinners and Board of Director or Donor events throughout the season is expected. The position is responsible for ensuring all health and safety standards for dietary requirements and restrictions for all meals are met.

 

This position must reflect Hurricane’s core mission of leadership and sustainability, through the oversight of sustainable food services, Galley operations, thoughtful food purchasing, meal and event preparation, and waste management (trash, compost, recycling etc.) The Galley Director/Head Chef will work closely with the Island Director and Program Manager, as well as the Administrative Operations Director.

 

Responsibilities & Expectations

  • Responsible for the management and oversight of the Hurricane Island Center for Science and Leadership’s galley and galley support staff.
  • Responsible for food preparation and service of 3 meals a day for an island community of 40-60+ people ranging in ages from middle school students to adults, in addition to special events such as Farm to Table dinners and Board/Donor events, with support from other kitchen staff.
  • Build and maintain an open and welcoming environment in the kitchen that is in-line with Hurricane’s core values and that supports a diverse educational learning community.
  • Work with the Island Director and Administrative Operations Director to create and manage a rotating weekly schedule with other kitchen staff to ensure that the kitchen is adequately staffed at all times.   
  • Oversee menu planning for all programs to ensure that all dietary needs and food allergies are addressed, as well as attention to variety, nutrition, and food group balance.
  • Manage all food purchasing and ordering, including organizing the logistics of food provisioning and deliveries to the island, with support from the Island Director and Program Manager.
  • Responsible for oversight of the food program budget, with support from Administrative Operations Director.
  • Oversee kitchen cleanliness, food storage, and overall organization of the kitchen, including washing dishes.
  • Ensure Maine Food Code, health and sanitation regulations are being followed and enforced.
  • Solve problems that arise regarding any aspect of foodservice.
  • Act as the liaison between the kitchen and the rest of the campus staff in communicating Galley needs, safety trainings, and departmental expectations.
  • Create both structured and spontaneous opportunities to teach about food systems, production, and nutrition. 
  • Work with the Facilities Manager to keep equipment running properly and make improvements when possible.
  • ServeSafe certification. 
  • Troubleshoot and problem solve any issues that arise regarding food preparation, service, or staff challenges.
 

Essential Qualifications

  • Experience in large-scale/commercial food preparation and kitchen management.
  • Extensive cooking experience with both large, multi-age student groups ranging from middle school to adults, as well as planning and executing special events such as Farm to Table Dinners and Donor receptions.
  • General knowledge of commercial kitchens and required operations.
  • Proficiency with Microsoft Word and Excel.
  • Serve Safe Certification
  • Experience in supervision, management, and development of other staff.
  • Hard working, strong oral and written communication skills, and the ability to work independently as a positive group member.
  • Extremely organized and attention to detail.
  • Knowledge of or interest in sustainable food practices and systems.
  • Self-reliant, motivated and an ability to function under limited supervision;
  • Works well on a team as both a leader and approachable coworker.
  • Experience and competency in managing a budget and staff performance.
 

Physical Requirements/Environmental Conditions

  • Requires physical exertion to manually move, lift, carry, pull or push objects or materials that often exceed 50 lbs. 
  • Must be able to work in a noisy, energetic work environment.

Beneficial Qualifications

  • Teaching experience
  • Knowledge and experience with farms, gardens, composting.
  • Experience living in remote places and/or in a community work environment.
  • CPR, First Aid, WFR or similar certifications.
 

Compensation
