Rossi’s Rosticceria is a 40 year old family owned Poughkeepsie landmark. Voted best sandwich in New York, we are more than just an “old world” deli. We produce our products in house and operate a full service catering operation. We are currently going through an expansion, featuring a new 5000 square foot retail space, commissary kitchen and bake shop facility planned for a 2021 opening.

POSITION SUMMARY:

The Production Sous Chef is a “hands on” position responsible for overall food production, organizing and leading the production team. Able to manage and lead the kitchen in the Executive Chef's absence, with the same quality standards. Exhibits culinary talents by personally performing tasks while assisting in leading the staff and managing all food related assignments. Also assists in supervising all kitchen areas to ensure a consistent, high quality product is produced, all storage locations are in excellent condition. Assist in inventory, purchasing and part. Adhere and enforce New York State Health Department code and HACCP standards.

 

QUALIFICATION REQUIREMENTS:

Good culinary skills and management skills. Formal culinary training preferred.
 

  • 5-7 years kitchen experience with 2 year's at a leadership level, preferably to include Italian cuisine and high volume catering.
  • Must have high quality standards.
  • knowledge of all basic cooking techniques.
  • Display strong work ethics and work habits.
  • Understanding of inventory systems and recipes standardization.
  • Competent in organization and time management skills
  • Fair and firm management abilities.
  • Hands-on approach, leads by example.
  • Excellent communication skills
  • Strong understanding of all sanitation standards
  • Initiative and Self-motivated, Team player and flexible. 
  • Knowledgeable and Passionate about Italian cuisine
