Job description

Position Overview

We are looking for candidates with experience in baking and pastry. The Pastry Assistant works closely with and reports to the Pastry Production Manager. The Pastry Assistant is involved with preparing and decorating various tarts/cakes and high end pastries, to produce finished products that meet consistent, high quality standards. The Pastry Assistant is responsible for handling complex mixing methods, and finishing our cafe’s beautiful desserts. This is a position that requires working on the floor alongside fellow team members in order to fulfill the needs of the bakery.

Duties and Responsibilities

  • Work with a small team to prep/finish high end retail pastry’s
  • Understand complex mixing methods, I.E. creaming, foaming, separated foaming, custards, curds
  • Show keen attention to detail, able to spot subpar product vs. appropriate quality product
  • Work closely with Pastry Chef and Sous chef to produce components for seasonally rotating café pastries and how to properly assemble/garnish all items to be sold in the cafés
  • Create various items including but not limited to Eclairs, Pate Sucre, Mousse, Cakes, Macarons, Pastry Cream, Buttercream, Ganache, etc.
  • Keep a well-stocked inventory of components, making sure that we meet critical par levels without overstocking
  • Follow the weekly production plan, while being able to understand the bigger picture, and adding something on to it if something more needs to be done so the next shift/day can be successful
  • Maintain organization of components in walk-in/freezer, making sure to follow clear labeling of racks/shelves so no products are overlooked
  • Follow proper FIFO procedures, to ensure the freshest possible product is reaching the customers
  • Maintain a clean and organized workspace
  • Fill, finish and garnish various items including tarts, cakes, eclairs, filled cookies, etc.
  • Follow company packing procedures to ensure product makes it safely to the appropriate destination

Compensation

Trainee Level $14.00/hour
Apprentice Level $15.00/hour
Professional Level $16.01-$19.00/hr

Requirements

  • Ability to lift 50lbs repeatedly during an 8 hour shift
  • Comfortable standing for long periods of time
