Qualifications:
-
Minimum 2 years experience in mobile pizza oven or food truck experience

Proficient in Pizza and Dough-Making
-
Working knowledge of working large scale pizza pop ups and festivals nationwide
-
Minimum 3 years of line cook experience
-
Strong logistics and troubleshooting skills
-
Proficient in administrative duties

Experienced with menu and recipe development
Responsibilities:
-
Implement and maintain all standards set by the company
-
As an ambassador for Roberta’s, always conduct yourself professionally in all work environments. You are the representative of our company both inside and outside of the work realm

Lead by example. Mentor and groom staff. Hold all team members to the same standards.

Flexibility to work any station in the restaurant in both kitchens (prep, expo, colds, pasta, grill, deck, slapping, oven and new stations as they are created.

Develop the manner and means to train staff according to established standards
-
Ensure the efficient operation of food production in all areas of oversight
-
Oversee all cost analysis and quality of food production
-
Understand costing, pricing, and sales goals for the restaurant, mobile and pop up operations.

Set the standards for safe work habits and DOH compliance
-
Full understanding of all kitchen’s two minute drill
-
Prepare the entire kitchen staff for a DOH inspection and manage the staff during inspection
-
Ability to walk inspectors through during a visit
-
Ensure all mobile and pop up operations are up to DOH compliance.

Ensure teamwork and proper communication with the front of house staff
-
Build a culture of collaboration and problem solving amongst the management team
-
Ability to do staff schedule, and other administrative tasks as required
-
Menu/recipe development in conjunction with executive chefs/owner for existing restaurants and new openings
-
Maintain clear and consistent communication with prompt and professional response to emails, texts, etc
-
Develop menus for catering/events to maximize sales and profitability
-
Oversee organization of all shared kitchen spaces and walk-ins per your direction and delegation to other staff members. Work with our Head Steward for all organizational changes.

Lead bi-weekly sous chef meetings
-
Flexibility to travel domestically and internationally (up to three months) for openings, consulting projects and pop-ups.

Valid driver’s license with clean driving record.

Maintain a valid passport at all times
