OSAKANA is a Japanese-style fish market and specialized in providing the sushi grade fish to NYC. We teach customers how to enjoy more fish at home by in person classes and online YouTube channel.
Job descriptionLooking for people with previous kitchen experiences who are looking for improving their fish butchery skills especially with the focus on how to prepare sashimi. Previous customer service experience will be essential.
Osakana applies Japanese ways of handling fish with the philosophy of Mottainai "no waste." Your day starts always with sharpening your knives with wet stones, butchering a lot of fish that changes daily, you will be washing your own dishes, and you will end your day cleaning the floor.
Osakana functions as a commissary kitchen for Okonomi/YUJI Ramen as well. You will be making ramen broth as well utilizing all of the fish bones. You will earn the life time fish butchery skills that you will not learn anywhere else.
