Job description Callicoon Hills is a 65-room hotel with multiple food and beverage outlets, indoor banquet space, and an event barn with wedding ceremony site. As the Director of Food and Beverage at the Callicoon Hills property you will be instrumental in the planning and executing of all food and alcohol programs. You will be in charge of menu planning and costs, preparation and presentation of food and drinks, and adherence to quality and safety standards. You will be expected to draw on experience and apply creativity to develop a robust strategy and create food and beverage packages for the 3 hotel outlets: café, bar and restaurant as well as catering packages for the event barn. The Director of Food and Beverage will handle the catering program for 15-20 weddings a year and an additional 10-20 various events of different sizes. You will be the point-of-contact for all catering details. You will also be responsible for structuring the Food and Beverage department and hiring all staff underneath you for all hotel outlets. This will require the knowledge of how to build a successful team structure from the ground up while also filling in for certain roles when needed. This position requires pre-opening experience with the ability to build different outlets from the ground up. This role requires the employee to live within 30 minutes of the property or for the employee to relocate to the area.



Job Responsibilities:

  • Develop and oversee all 3 of the following hotel outlets:
    • Café: serving coffee and light breakfast and lunch offerings from 7am-5pm daily.
    • Bar and Restaurant: indoor and outdoor seating with food and beverage offerings open from 5pm-10pm daily.
  • Design and implement exceptional menus all food and alcohol programs.
  • Cost all items for menu implementation.
  • Oversee catering program for a venue that accommodates up to 250 people with a target wedding size of 175 people.
  • Oversee catering for 15-20 weddings a year and an additional 10-20 other events of various sizes.
  • Work with existing budget constraints to execute 2021 menus.
  • Adjust and structure offerings for 2022 and beyond food and alcohol menus and programs.
  • Manage all F&B and day-to-day operations within budgeted guidelines and to the highest standards.
  • Preserve excellent levels of internal and external customer service.
  • Design exceptional menus, purchase goods and continuously make necessary improvements.
  • Identify customers’ needs and respond proactively to all of their concerns.
  • Lead F&B team by attracting, recruiting, training and appraising talented personnel.
  • Establish targets, KPI’s, schedules, policies and procedures.
  • Comply with all health and safety regulations.
  • Report on management regarding sales results and productivity.
  • Work closely with all Executive Team members in supporting and achieving the hotel's goals and objectives.
  • Analysis of F&B prices in relation to competition.
  • Participation and input towards F&B marketing activities.
  • Preparation of sales promotions.
  • Handle all F&B inquires and ensure timely follow up on the same business day.
  • Co-ordinate with Director of Sales and Events and specific groups for requirements on catering for weddings and events.
  • In charge of confirming all catering details relative to weddings and events.


Job Requirements:

  • Proven food and beverage management experience.
  • Proven pre-opening experience in restaurants and hotels.
  • Working knowledge of various computer software programs (MS Office, restaurant management software, POS).
  • Ability to spot and resolve problems efficiently.
  • Mastery in delegating multiple tasks.
  • Up to date with food and beverages trends and best practices.
  • Ability to manage personnel and meet financial targets.
  • Recruit, hire, and build a successful Food and Beverage team to work underneath you and manage all hourly staff.
  • Strong verbal and written communication skills.
  • Excellent organizational and planning skills.
  • Must be able to effectively communicate both verbally and written with all level of employees and guests in an attentive, friendly, courteous and service oriented manner.
  • Must be effective at listening to, understanding, and clarifying concerns raised by employees and guests.
  • Must be able to lift up to 30 lbs.
  • Role requires employee to live within 30 minutes of the property or for the employee to relocate to the area.
