Position Qualifications: We are seeking someone who is highly skilled and proficient in preparing, and cooking an extensive range of foods, including soups, salads, entrees, and desserts. The ideal person has experience producing meals for 300 or more people on a daily basis.
They also have these skills:
- Wide range of knowledge about commercial kitchen production and equipment
- Ability to accurately follow directions, menus, food prep lists, and ingredient lists
- Demonstrated ability to check freshness of food and ingredients prior to cooking
- Knowledge of food safety and handling procedures
- Well versed cleaning work areas, equipment, utensils, dishes, and silverware
- Ability to lead a TEAM and stay organized
- Vegetarian cooking experience is a big plus
Specific Position Responsibilities:
- Arrive at camp one-week early (May 19, 2021) to assist in opening the camp kitchen for the summer season
- Work with Director of Operations to plan healthy, balanced, predominantly vegetarian menus that meet camp goals
- Manage the kitchen and supervise cooks and pastry chef
- Responsible for meal production on Shift Chefs’ days off
- Create kitchen prep lists for the entire kitchen staff
- Create schedules with Director of Operations for all kitchen staff
- Work with Mashgiach (Kosher Supervisor) to make sure that all food products being ordered are kosher
- Oversee food safety and handling procedures and training
- Assist in training all staff and helping them grow in their culinary knowledge
