General Responsibilities & Expectations

  • Work with the Chef and Culinary Director to develop the vision and long-term goals for the food program at Marlow & Sons including research, recipe testing, and development.
  • Assist Chef in leading the team to operate in accordance with achieving budgeted food cost including:
    • Actively engaging with monthly P&L statements and other financials to understand food cost trends
    • Costing dishes to ensure accurate pricing prior to their addition to the menu
    • Maintaining familiarity with vendors and procurement
    • Daily inventory maintenance
  • Assist Chef in scheduling, organizing, and monitoring BOH labor and productivity in accordance with business demand to achieve labor budget expectations
  • Maintain and enforce all DOH and cleanliness protocols. Act in partnership with Diner and Marlow & Sons BOH management teams in keeping all refrigeration and food production areas to par according to those standards.
  • Work with management teams to:
    • Demonstrate knowledge of, administer, and maintain adherence to applicable labor laws, regulations, and internal human resources policies and practices
    • Continuously recruit to build diverse, committed teams
    • Teach, train, and mentor to foster the conditions for success on team and individual levels
    • Resolve conflict and employee performance issues through coaching, counseling, and progressive discipline
    • Manage with empathy and integrity to build a culture of inclusion and belonging
  • Participate in regularly scheduled meetings regarding the overall strategy and success of the business, including quarterly financials meetings and HR trainings

While performing the duties of the job, the Sous Chef is regularly required to stand and walk; reach with hands and arms; talk and hear; climb, balance, stoop, kneel, and crouch. They must regularly lift and/or move up to 25 pounds and occasionally lift and/or move up to 50 pounds. Compensation this position is : salaried, 50k-75k Application instructions
