Company description We are currently a three restaurant group with 2 restaurants in Charleston, SC, and a fish market/food truck in Nantucket. We are growing our group all the time. Job description 167 Sushi Bar is looking for a PM sous chef. Sushi and fish butchery experience is a plus, but this position will mainly be focused in our hot kitchen. You will be working closely with myself, the executive chef. We are a nigiri focused sushi program utilizing techniques such as cryofreezing, dry aging, fermenting (koji and otherwise), charcoal griling, smoking and curing to provide an exceptional experience. 

With the right team, we will continue to push boundaries and modify expectations in our local culinary landscape. This position will be largely tasked with elevating consistency and hot cooking techniques on our two man line, as well as ordering, menu development, and creative collaborating with the executive chef and sushi chef. We are really looking for someone to take leadership of the hotline. We work with a number of purveyors, local and otherwise, to get in product unique to our establishment. 

The style of cuisine is New American/Japanese with a huge emphasis on seasonality and locality to the South Eastern United States.  Compensation this position is : salaried, 50k-75k Application instructions
