In 2015 we started our journey as pop-up vendors participating in various markets from NYC to Hudson Valley. After six years of operating as a pop-up, we found our own storefront in April 2021. Since opening our doors for takeout on a part-time basis (Friday-Sunday), we have more than tripled our production capacity with the small crew of 3, which we started our business with. In order to increase our production further, we are looking to expand our team!  Given that we are such a small and rapidly growing business, the candidate hired will have the opportunity to grow, have their input valued, and be able to help shape our future. The Lead Baker is responsible for the development and preparation of a variety of doughnut types (flavored, sourdough, laminated and cake), laminated pastries and baked goods such as cookies, coffee cakes, handpies, danishes, biscuits and more. We are seeking an individual who is knowledgeable, efficient, clean, organized, reliable, and self-driven. As Lead Baker, you will constantly work with our bakery crew to improve our formulas and processes so we can achieve and maintain the highest quality and standards. You will also work closely with the Head Baker to test and release new products. 

QUALIFICATIONS:

  • 3+ years experience working in a commercial bakery making products from scratch 
  • Experience working with yeast raised doughs, laminated pastries and sourdough
  • Understand and have an interest in the science of baking, including vegan baking
  • Ability to stand and work for shifts of 8 hours
  • Ability to lift up to 50 pounds
  • Available on weekends
  • Available early mornings (as early as 4am if needed)
  • Work with a sense of urgency
  • Work well in a team environment 
  • Be detail oriented
  • Be comfortable communicating with management, co-workers and customers
  • Be customer service oriented (you may be required to assist our retail staff with customers)
  • Have a valid driver's license (strongly preferred) and/or must have a reliable commute to work 
  • Must be at least 18 years of age
  • Vaccinated against Covid-19

RESPONSIBILITIES: (although an exhaustive list, responsibilities will grow over time, we want to make sure candidates are well informed before applying for this position, so they know what to expect!) 

  • Production of yeast raised doughnuts (mixing, kneading, shaping, sheeting, cutting, frying, filling, decorating and displaying)
  • Production of laminated pastries, using our sheeter and rolling by hand 
  • Mixing, rolling, portioning, shaping, baking, finishing and displaying cakes, cookies, handpies, scones, biscuits, etc. 
  • Assist with bread production if needed
  • Maintain a clean and organized work space and assist with cleaning and putting away dishes (we all do dishes here, including the owners!)
  • Uphold our sanitation and quality standards at all times
  • Work efficiently and accurately 
  • Work under and report to the Head Baker
  • Follow company safety procedures and protocols
  • Help to establish, update and carry out our values, policies and procedures as a team
  • Help to oversee and participate in the production of our doughnuts and pastries 
  • Help to review and maintain quality and consistency of our products 
  • Work with the Head Baker and bakery team to create weekly production schedules
  • Facilitate and manage the formulation and testing of new doughnut, bread, laminated or baked good products
  • Assist in keeping an inventory of bakery ingredients and packaging
  • Collaborate with the bakery team to create and maintain a baking binder of our current products, recipes and procedures 
  • Optimize our baking schedule to achieve the best possible product with our constraints of time and space
  • Collectively work with our bakery team to take proper care and maintenance of our bakery equipment, work stations and kitchen facility as a whole
  • Train and instruct other bakers in our methods and workflow
  • Communicate with the retail manager regarding inventory, product descriptions, allergens and other pertinent education for guests and staff
  • Assist with retail tasks as needed
  • Ensure a positive customer experience
  • Follow protocols and safety procedures in place, including covid-19 procedures
