Job description

Beyond Harvest Foods' USDA custom processing facility in Phenix City, AL needs an experienced Butcher to develop and lead our meat processing department. Currently, our facility processes beef, pork, and chicken, but we fully expect to add a slaughterhouse this fall and desire to add programs for aged meat, charcuterie, sausages, etc. Preference is given to those who practice "nose-to-tail" whole animal butchery.

  • Perform safe, sanitary, and consistent cutting/grinding/processing to specifications. 
  • Products: ground meat, sausages, smoked meats, aged meats, and charcuterie.
  • Maintain USDA and HACCP record keeping and documentation.
  • Exceptional sanitation and organization.
  • Willingness to assist with other plant operations when necessary.

Job requirements: 

  • Minimum of 3 years of experience.
  • Whole Animal Butcher: Complete knowledge of and the ability to produce various cuts and sizes from nose-to-tail. 
  • Proper use and maintenance of knives, hooks, saws, grinders and other specialized equipment.
  • Ability to break carcasses with precision, care, and respect.
  • Ability to teach and train others. 
  • Able to understand and follow written and verbal instructions. 
  • Able to work in cool and cold environments and stand for prolonged periods of time. 
  • Able to lift 50+lbs regularly, and 80-90lbs on occasion. 
  • Ability to perform twisting, turning and bending motions. 
  • Adhere to safety and sanitations procedures, food safety compliance regulations and
  • equipment maintenance standards.
