Job description

The Pastry Sous Chef is responsible for assisting in managing and overseeing all pastry operations.

As a member of our pastry team, you will work with high-quality ingredients, including unique spices, hand-selected artisan ingredients, and vegetables from our family farm.  You will mix and shape bread, work with phyllo, and make cookies and laminated pastries.  As Pastry Sous Chef, you will fulfill an important managerial role to lead and develop a strong pastry team alongside our Pastry Chef de Cuisine and Executive Pastry Chef.   This position is a unique opportunity to grow with our company while developing a deep breadth of Middle Eastern pastry knowledge.  

Working under the general supervision of the Pastry Chef de Cuisine and Executive Pastry Chef, the Pastry Sous Chef will

  • Manage all pastry operations and supervise staff. Solve problems and assist as needed.
  • Assist in managing all pastry production focusing on quality, consistency, taste, accuracy, ingredients, rotation, storage, appearance, timeliness, and efficiency.
  • Open and close the kitchen as directed.
  • Ensure adherence to Sofra’s standards in every aspect of food production and beyond while working to achieve operational excellence.
  • Assist in training pastry staff and updating training materials.
  • Assist in monitoring, assessing, and managing pastry staff performance.
  • Assist with pastry communication and maintaining strong communication between departments.
  • Assist with managing  all product ordering for the pastry department. Liaise with other departmental ordering needs.
  • Receive daily deliveries for all departments.
  • Establish, maintain, and develop vendor relationships.
  • Ensure proper stocking, rotation, organization, and cleaning of kitchen and all storage areas.
  • Prioritize safety, cleanliness, and sanitation in all facets of production and operation.
  • Assist with management of pastry food waste.
  • Assist with managing maintenance and upkeep of kitchen equipment.
  • Assist with managing pastry inventory.
  • Work with management team members to ensure success of cooking classes, special events and projects. Works events as directed.
  • Collaborate with team members to meet the company's financial objectives.
  • Meet with Sofra Managers as needed for consultation, coordination, and brainstorming.
  • Provide leadership, model appropriate behavior in the workplace, enforce company policies and procedures, and uphold quality standards.
  • Maintain company culture to champion vision, values, and uphold staff morale.

Qualified candidates will – 

  • Have 2-3 years of experience in high volume scratch baking, laminated dough, fine pastries OR high level of pastry knowledge
  • Have at least 1 year of management experience 
  • Have a passion for baking and strong sense of leadership
  • Be able to work full-time, averaging 45-48 hours/week
  • Have strong knowledge of kitchen cleanliness, safety and organization
  • Treat customers and co-workers with courtesy and respect
  • Be able to read and follow written recipes, deal successfully with multitasking and be comfortable in a fast-paced work environment
  • Exhibit a desire to learn and be challenged creatively
  • Have a strong attention to detail and a positive attitude
  • Have excellent attendance and punctuality
  • Have a desire for long-term employment
  • Be available nights, weekends, and some holidays
