The Hereafter is a new cocktail bar in Hudson NY, with an elevated small plates dining program. It is set in an intimate 45-seat room with a long, curved 20ft bar, cozy booths, and antique lighting. The bar focuses on craft cocktails and the food focuses on small, sharable tapas-style dishes that reflect seasonal ingredients and responsible farming practices. The kitchen is an open extension of the bar and its energy feeds into the night’s space. The overall service is attentive and warm, while remaining casual. The menu is designed by chef Grace Brannigan, using simple fresh ingredients from our neighboring farms. Kitchen service is run by one or two people, heating and plating various pre-prepped components. All the dishes are designed with speed and efficiency in mind.
Job description
The Hereafter is a new cocktail bar in Hudson that features a small kitchen focused on high quality,
creative and ever-evolving food. We are looking for an experienced sous chef to work alongside our team
to continue building and growing the food program.
The kitchen is non-traditional yet rigorous. You will be working in partnership with the Executive Chef to
form a small team that is excited to lean into the constraints of our intimate kitchen space to create
beautiful and memorable food. This is a salaried position averaging 40 hours per week and ideal
candidates are expected to possess a reasonable degree of flexibility with scheduling.
Your daily responsibilities may include (but are not limited to):
● Setting weekly schedule in collaboration with Executive Chef
● Setup and breakdown of the line for service
● Assist in executing recipes while contributing to overall menu development
● Washing and preparing of produce, herbs & fruit
● Cleaning and preparing of meat, fish & dairy
● Carrying out recipes for baking, sauces, dressings, etc.
● Assist the Executive Chef with inventory, costing and ordering
● Keep station clean throughout shift and properly handle closing of your station
● General daily cleaning & organizing of the kitchen areas
● Ferment, pickle and preserve ingredients to ensure a commitment to sustainability and
zero-waste practices
● Work with a sense of purpose and urgency
● Ensure that food comes out consistently, with high quality preparation and in a timely fashion
● Comply with nutrition and sanitation regulations and safety standards
● Assist guests with questions and concerns or direct them to a staff member who can
● Communicate effectively and frequently with management, staff, and guests
Ideal Experience:
● Proven cooking experience
● Excellent understanding of various cooking methods, ingredients, equipment and procedures
● Experience in overseeing kitchen operations
● Accuracy and speed in executing assigned tasks
● Ability to lift and move up to 50+ Ibs and stand for extended periods
● An interest in and excitement for beverage, food, and hospitality and the desire to always be
learning and growing
Compensation
this position is: salaried, 50k-75k
