The Sous Chef will support the Executive Chef (EC) and Chef de Cuisine (CDC) in executing all meals, daily prep, and general oversight of commissary kitchen operations. They will assist in menu development, design and implementation of kitchen systems, product utilization, food safety oversight, ordering and receiving.

  • Lead preparation and execution of meals, daily prep, and grab and go items
  • Lead production schedules and identify/implement production efficiencies in the kitchen
  • Ensure kitchen is regularly cleaned and maintained/in adherence to the Board of Health's policies
  • Manage Line, Prep, Dishwasher/Driver, and BOH staff on a daily basis - provide constructive feedback and training
  • Support menu development based upon client population desires
  • Support EC and CDC with daily/weekly ordering and receiving
  • Work with EC and CDC to develop kitchen systems for Emeryville kitchen
  • Work with EC and CDC to templatize kitchen systems for future Fare projects
  • Help develop and implement training systems and methods with EC and CDC for all BOH staff
  • Participate in daily staff meal production

  • 3+ years experience in a formal kitchen environment with a passion for food & people
  • Has experience as a restaurant/commissary Sous Chef
  • Strong understanding of professional cooking and knife handling skills, local and seasonal ingredients, diverse cooking styles and cultures, and producers and farms
  • Positive attitude, strong work ethic and professionalism, communication and patience
  • Fun to be around

  • Attendance and punctuality is required with schedule flexibility determined by needs
  • Ability to be a self-sufficient problem solver and make sound decisions on-the-fly

  • Manager level ServSafe certification
