Opened in 2012, Popolo is a community restaurant serving Italian-inspired farm-to-table cuisine. Started with many shareholders we consider among our goals the rejuvenation of the village and the improvement of the region’s dining options. Employee-friendly and socially conscious, we initiated our Living Wage policy in 2016 to guarantee everyone on our team at least $15/hour. We currently have approximately 20 employees and serve more than 20,000 meals annually. It’s also our goal to create delicious and interesting cuisine that is affordable and that piques the imagination of our diners. We pay more than lip service to the idea that food is an art that merits exploration and should never be samey or conventional. Equally, it wouldn't be prudent to offer meals that are pretentious or inaccessible. We aim for the sweet spot.
Our restaurant is a lovely space in an historic building along the first canal in America. At present, the building, which was a hotel for nearly two hundred years, is under scrutiny to become one once again. Bellows Falls is a walkable river village with an adjacent bookstore, hardware store, sporting goods shop, and numerous art studios and vendors of fine antiques.Job Description
We’re looking for an inspired and experienced professional, someone who is anxious to make a mark on the culinary culture of the area. With a reasonable understanding of the market you will be given broad creative control of the menu but you’ll be asked to participate in the health of the restaurant by strict adherence to cost of goods, kitchen management, reasonable waste, and the sanitary maintenance of our facility. Ownership opportunities may be available for the right person.

Conceived as an events driven experience, we enjoy special menus, locally sourced ingredients, the engagement of area artisans, farmers, and brewers, and we’ve made real progress in building good will in our community. You should have experience in fine dining and an affinity for hospitality and service.
