F.A.R.M.S. (Front of House Apprenticeship for Restaurant Management and Service)
Blue Hill at Stone Barns
Pocantico Hills, NY

For the past 10 years, co-owners Dan, David and Laureen Barber and their accomplished team have cultivated distinctive fine dining, farm-to-table experiences at Blue Hill in Greenwich Village and Blue Hill at Stone Barns, located on an 80-acre working farm and education facility 30 miles north of mid- town Manhattan.

Students committed to pursuing the connection between the farmer, the restaurateur and the guest are invited to join Blue Hill at Stone Barns for a singular six-month program.  Apprentices will not only gain exposure to front-of-house operations, but will dig deep, working alongside Blue Hill Farm and Stone Barns Center for Food and Agriculture’s four-season growers and livestock managers.

IN THE RESTAURANT
Apprentices will expand their knowledge of restaurant management and increase their level of service acumen by rotating through a series of front-of-house positions.  The training will also focus on translating the bounty of the farm into a fine dining experience.  Tending to and gathering herbs for the nightly tisane display or assisting with the restaurant’s terrace landscape will introduce students to the unique rewards of sourcing and serving seasonal ingredients.

ON THE FARM
The doors (and roof) of Stone Barns Center for Food and Agriculture’s 12-month greenhouse will swing open for students eager to seed, weed and harvest over 35 varieties of greens and vegetables. And Blue Hill Farm’s pastures are ready for apprentices curious about how the “law of the second bite” produces healthy and delicious meats and dairy. In the kitchen, participants can join the chefs in introducing school visitors to the wonders of cooking.

JOIN US
Blue Hill looks forward to providing students with a unique apprenticeship, one that creates a deep appreciation for ecologically sound farming and demonstrates a sustainable framework for their career in hospitality management.

INVOLVEMENT
growingSOUL

Montgomery County, MD

We are growingSOUL – Sustainable Opportunities for Universal Learning – and we are closing the gap in the loop between food waste and increased fresh food supply in Montgomery County, Maryland. Our efforts are keeping valuable compostibles out of the waste stream and helping alleviate the problem of hunger locally, where 33.1% of schoolchildren are eligible for free and reduced-price meals.

Several times a week, we collect compostibles from local restaurants, markets, coffeehouses and the community-at-large, as well as from Manna Food Center, our local food pantry. We are also an educational presence at the Olney Farmers' Market where we share a booth with two of our partners: Project Change, an award winning best practices Student Service Learning organization; and Fresh Give, an organization dedicated to getting farmers paid for the fresh food they normally donate to Manna. We are managing the separation of the Market's waste this season, composting and recycling what we can, reducing landfill-bound trash by 90%. We also engage the community at the market, making worm bins, offering free composting buckets to be returned to us full, and teaching about closed-loop, zero-waste food production. The kids who participate in Project Change are our Sustainable Foods ambassadors.

We take the compostibles we've gathered during our weekday and market-day collections to a partnering farm, Grassential, where we add them to either a standing hot compost pile from mixed sources that gets to 170 degrees to kill off pathogens, or to an all-organic scrap based-vermicomposting pile where red wigglers work to convert healthy food scraps to nutrient-dense worm castings - the best fertilizer on the planet. Our compost is Gardener's Gold; our castings are Platinum. We make the finished compost and castings available to programs that “Grow-a-Row” for Manna, as well as the community-at-large programs we support by teaching raised bed, container gardening and aquaponics techniques, so that what was once discarded food can become the basis for more healthy, nutrient-dense food for people who need it.  Our collection routes encompass a loop of 50-75 miles per day, and we collect a couple of tons of compostibles per week, keeping it out of the waste stream and creating improved soil for better and more abundant food, all within the local community.

Nearly all of the materials we use in our programs have been acquired through Freecycle, so in our organizational growing model, we have also incorporated the zero-waste ideal, taking on what others have discarded and giving it new purpose and extended usable life. Even our infrastructure reduces landfill stress. There are four “R”s to our model: Reduce, Reuse, Recycle, and Rot.

If this sounds like something you would like to get involved with, please give me a call and we can find a fit for you. Thanks so much for the contact.
