We’re Erica and Will Messmer, the wife-and-husband team behind Darke Pines butcher shop. Dedicated to locally-sourced, responsibly-raised meat, Darke Pines is the only whole animal meat supplier serving Downtown Jersey City.
With our team of experienced butchers, cooks, and food service professionals, we cut, cook, and serve grass-fed beef and lamb, pastured pork, and free-range poultry, all hormone and antibiotic free and sourced from small, local farms.
Our expanding menu of house-prepared foods includes charcuterie, sandwiches, soups, treats, and stocks.

Who you are:
- A whole animal butcher with experience cutting and cleaning beef, pork, lamb, and poultry for a retail butcher case.
- A team player and an open-minded collaborator.
- A seasoned home cook and/or experienced food professional with a broad working knowledge of cooking with a variety of ingredients.
- A lover of all things cooking and food related!
What you’d be working with the team on:
- Breaking down whole animals—beef, pork, lamb, and poultry—into primals, sub-primals, muscles, roasts, steaks, chops, etc.
- Stocking our retail butcher case with all of the above.
- Supporting our head chef and production team with meat to make sausage, charcuterie, and other prepared foods.
- Stuffing sausage.
- Coming up with creative ways to make use of the entire animal.

Compensation
this position is: hourly, varies DOE, $16.00 - $24.00
