Job description
The Hana Harvest Cafe is hiring a Food Truck Manager who is aligned with our vision and wants to grow with the company.
The Hana Harvest Food Truck Manager is a full-time position with hands-on responsibility for managing food service operations within a food truck, café truck and prep kitchen. The Food Truck Manager works in partnership with a Café-Retail Manager to ensure an efficient, cooperative and seamless operation.
Core Responsibilities
Food Service:
- Develop menu.
- Develop detailed written recipes.
- New recipe creation featuring local, sustainable, organic, nutrient dense food, while staying within budget.
- Provide detailed written instructions to staff for assembly, heating/cooling, etc.
- Manage advance food preparation process at kitchen.
- Hands-on food preparation and service in food truck 1-2 days per week, and as needed to accommodate for staff shortages.
- Execute quality production, stocking, labeling, and presentation of menu items.
- Daily troubleshooting: accommodating fluctuating customer flow, staff issues, equipment malfunction, etc.
Inventory Management:
- Track inventory using established systems and maintain inventory at correct levels for use and profitability.
- Place orders with vendors for fruit, vegetables and dry goods in a timely fashion.
- Maintain current vendor list.
- Track ice needs for freezer on a daily basis.
- Monitors baked and grab-and-go items and rotates inventory.
- Work with Hana Harvest Farm Manager to plan for planting ahead to meet Café needs, source and order from farmers.
Staff Management and Training—Food Production:
All staff with be cross-trained to work in Food Production and Retail and Customer Service. Food Truck Manager will train staff in all aspects of Food Production and Café-Retail Manager will train staff in Retail and Customer Service.
Trains and manages 2-5 staff:
- Foster a positive, productive and collaborative work environment, and encourage an attitude of pride in quality work.
- Guide and direct back-of-house staff to accomplish the tasks/goals/duties/needs of the day.
- Manages day-to-day back-of-house issues but communicates serious staff challenges to owner.
- Scheduling:
- Works closely with Café-Retail Manager to develop weekly schedule.
- Develop weekly work schedule for food truck, café truck and baking kitchen.
- Communicates tasks and schedule to staff and confirms availability.
- Takes measures to ensure staff shows up for work.
- Accountability:
- Stocks all checklist, recipes and paperwork for back-of-house staff.
- Monitor staff members time clocking.
- Ensure staff follows and logs opening and closing procedures.
- Corrects any problems, as necessary.
- Approve staff time for payroll.
- Food Truck Staff Training:
- Train staff in all aspects of food preparation, service, equipment and facility maintenance, procedures and paperwork.
- Train staff in COVID safety protocol and ensure compliance.
- Train staff and ensure food safety and sanitation protocol is followed.
- Train staff in use of POS system.
Business Management:
- Works closely with the Café-Retail Manager.
- Communicates and mediates between the owner/operator and employees in order to accomplish business goals and to help integrate changes and systems meant to expedite service and create a successful and safe work environment.
- Stays attentive to providing an excellent customer experience and makes adjustments or suggestions for improvement.
- Understands and manages POS system, ability to print, read and interpret reports.
- Adjusts daily menu items to maximize profitability:
- For example: promotes soup on rainy days and smoothies on hot days.
- Keeps an eye on smoothie and other food sales numbers at intervals throughout the day.
- Maintains quality and consistency of service and products.
Physical Facility and Equipment:
- Use, clean and properly maintain the equipment and workspace of the food truck, café truck, and dining areas.
- Report maintenance/breakage issues to Owner.
Regulatory and Safety:
- Ensure food operations meet all federal, state and Hawaii State Department of Health requirements.
- Enforce the proper wearing of masks by back-of-house employees at all times.
Required Skills/Abilities:
- Must have a cell phone and be able to check and return calls and email from off-site locations.
- Must have reliable transportation and ability to travel between multiple work locations.
- Excellent organizational skills.
- Adaptable to changing conditions and competing needs.
- Ability to work cooperatively in a team.
- Proficient with Gmail, Google Docs, MS Office (Word and Excel) and Square, or willing to learn.
- Mature communication skills, including an ability to have clear and respectful conversations with employees and ask them to modify certain behaviors.
- Comfortable working in a face-paced environment and is adaptable, cool under pressure and comfortable with change.
- Sees the big picture and is also attentive to details.
Education/Experience:
- Minimum high-school graduate/GED preferred.
- Formal culinary and food service training.
- 4-years minimum chef and food service experience in a food truck or restaurant.
- Must have valid driver’s license.
Physical Requirements:
- This is a physically demanding position that requires being able to:
- Lift and move heavy items up to 50 lbs.
- Stand for long periods of time.
- Work for long periods of time in a small space (food truck).
- Use hands to handle, control or feel objects, tools or controls.
- Repeat the same physical movements.
- Tolerate moderate noise from machinery.
- Communicate with the ability to speak and hear.
Compensation
this position is: salaried, $50,000 - $75,000
