Bella Dea, the sister restaurant of Crudo e Nudo in Santa Monica, is NYC's only exclusively local seafood restaurant and raw bar. We dedicate ourselves to sourcing only whole, day boat fish and shellfish from the North Atlantic. We sukibiki and dry age whole fish in-house. The menu, inspired by the coastal Italian tradition of 'pesce crudo' combines the bounty of our local coast, greenmarket veggies, and world-class olive oil.
Our wine program, lead by GM and Somm Zoe Wilkins, highlights up-and-coming winemakers practicing minimal intervention farming and wine-making practices. Each wine is unique in its expression of terrior and thoughtfully compliments our food.
Job description
We are looking for a Sushi Chef and/or an experienced fish butcher. We get in whole fish, and sukibiki ( hand scale with a knife), gut, and hang all fish. We are looking for someone with a passion for seafood and butchery. Any sashimi slicing experience is a huge plus. Role is 40 hours per week, hourly, plus tips. We are a small, sustainably-minded, company looking to grow the right people.
Compensation
this position is: hourly, $20/hr +
