Ciao, Gloria is a bustling, Italian-American daytime cafe in Prospect Heights, Brooklyn and is looking for a Pastry Chef/Kitchen Manager.
They will be responsible for the entire kitchen as a unit, leading a team of bakers and cooks to produce a seasonal menu of pastries, desserts and savory items with a decidedly Italian accent. Aside from daily production and responsibilities, they will also head up menu creation and development, instructing other bakers and cooks on how to successfully recreate them.
On a typical day, they are one of the first employees to arrive. They will check inventory levels, pars and make prep lists. At the end of the day, they help their staff clean their stations and inspect the kitchen to ensure everything is organized and sanitized appropriately.
They should know how to motivate your staff and encourage a team spirit when working through busy service times. They are mindful of finances and enjoy shopping around or negotiating to get the best price on inventory from restaurant suppliers.
A successful candidate should also be able to deliver consistent, quality products to customers on time and within budget. Their role is to lead back-of-house staff including Bakers, Line and Prep Cooks and Dishwashers before, during and after meal service.
They should also perform the essential duties and responsibilities of a Baker, which can include: Assessing the quality and freshness of ingredients and following recipes. Prepping ingredients, decorating cakes and cookies, washing dishes and sanitizing the kitchen. Utilizing basic math, technological and practical skills. Possessing time management, communication, organizational and resource management skills.
Ideally, the candidate is both creative and analytical. They understand the chemical and physical reactions involved in baking and be artistic enough to create an attractive end product. They should be communicative, organized, focused, punctual and be able to correctly schedule baking times and produce customer orders in a fast-paced environment.

SKILLS / REQUIREMENTS / RESPONSIBILITIES:
- Proficiency in baking skills/techniques. Oversees and prepares brioche and focaccia dough, muffins, cookies, pies, cakes, doughnuts and other pastries, including icings and buttercreams, according to established recipes.
- Follow recipes, portion controls, pars, and presentation specifics.
- Work with ownership to develop and maintain the menu. Conduct research to develop original recipes for products.
- Recipe development and troubleshooting, creating recipes and instructing other cooks on how to successfully recreate them.
- Able to recognize superior quality products, presentations and flavors.
- General oversight of savory.
- Familiarity with professional cooking techniques.
- Knife handling skills.
- Ability to maintain consistency and quality control with our menu.
- Ability to work cleanly, quickly and efficiently.
- Manage daily inventory and food ordering.
- Assist teams with preparation work when necessary.
- Flexibility to work around customer demand.
- Maintain a clean, safe and well-stocked workstation, kitchen area, storage area and walk-in.
- Understand ordering, manage inventory, organization and consolidation.
- Responsible for receiving ingredients and other supplies as required for daily operations.
- Work closely with other kitchen leads and staff to ensure effective production of items.
- Review production schedules to determine variety and quantity of goods to bake and to assemble supplies and equipment needed for daily baking activities.
- Responsible for training / cross training staff.
- Set regular cleaning standards for the kitchen and verify that staff is maintaining sanitation levels.
- Operate and maintain all department equipment and reports malfunctions.
- Facility cleanliness and NYC DOH food safety standards.
- Administrative work, competency with Google apps (Mail, Sheets, Docs) Slack and MS Office
- Complete production sheets and other records as required.
- Ability to develop recipes and maintain and update our recipe catalog.
- Ability to hire, train and schedule all kitchen staff.
- Ability to plan and forecast.
- Management of production lists.
- Track kitchen finances to identify areas of potential waste.
- Attend all scheduled employee meetings and brings suggestions for improvement.

EXPERIENCE:
- Completed a pastry/culinary arts degree or certificate.
- 3-5+ years of management experience.
- Food handler's certification (required)
- Experience with Italian pastries is a plus.
- Competency in Spanish is a plus.

Compensation
