Job description
We are looking for a highly motivated, creative, and conscientious Chef to head our new food program at Mendocino Grove. Entering into our 8th season, we are excited to offer a complimentary breakfast service, catered events and weekly pop-up dinners. This is an opportunity to showcase your strengths, vision and talents. You will be working in a newly constructed and fully outfitted commercial kitchen in close proximity to a number of small family farms, a busy working harbor and a strong food culture influenced by the SF Bay Area.
And while we have ideas and structure around the new program, we love collaboration and look forward to supporting your artistic vision.
Responsibilities include:
- Creating the menu and prepping for our complimentary guest breakfast.
- Creating, refining and producing menus for corporate mid-week events.
- Creating and producing dinner menus for our public “pop-up” events including the Campfire Series.
- Managing the kitchen including and not limited to: ensuring a clean, well stocked & provisioned kitchen, maintaining a kitchen schedule, following food safety protocols, keeping records to mitigate theft and wastage.
- Working with vendors to assure best quality, price and timely receipt of goods. Sourcing high quality and locally grown ingredients whenever possible.
- With HR support, Scheduling staff for all events where food is served. These events include but are not limited to: daily breakfast, catered meals and pop-up events.
Qualifications:
- Experience cooking for 120 plus people.
- A minimum of 5 years restaurant or catering experience with 2 solid references.
- Strong kitchen management skills - ability to delegate and work well with others.
- A commitment to maintaining consistency and high quality at all times.
- Strong organizational skills to create effective prep lists and ability to delegate well to maintain high quality and consistency when you are away.
- Pastry chef experience is a plus.
- Spanish Speaking is a plus.
Compensation:
The seasonal position includes housing - a beautiful one bedroom cottage on campus with views of the Pacific Ocean and $20 + HR.
Length of Commitment: We require roughly a 7 month commitment from April 15 to November 15 for participants to be eligible for the seasonal program.
