POSITION SUMMARY: The Sous Chef must be experienced with cooking, menu development and demonstrate the ability to successfully lead a diverse team of staff by coaching, training cooks and other staff in a high-volume kitchen. The Sous Chef will also demonstrate a high attention to detail and maintain high standards for quality, cleanliness, presentation, food safety and efficiency.
JOB REQUIREMENTS:
- At least 3 years prior kitchen supervisory experience, strongly preferred
- Experience with Word, Excel, and Outlook a plus
- Proficient oral and written communication skills
- Excellent organizational skills and attention to details
- Clean drivers record and unexpired drivers license needed to drive company vehicle for events.
- Must demonstrate an ability to successfully work with a culturally diverse workforce
- Must be able to lift to 50lbs unassisted
- Must be able to pass background check, successfully complete a pre-employment physical, provide employment documentation and provide us with a Covid-19 passport or be in the process of being vaccinated against Covid-19 within the first 30 days of employment
- Food Handler Management Certification
- Bilingual Spanish preferred
DUTIES AND RESPONSIBILITIES:
- Develops the skills of kitchen staff with specific emphasis on high volume and high-quality food production. Trains and develops kitchen staff. Works with Executive Chef to ensure all kitchen tests and training material and methods are up to date and effective.
- Supervise main hot line, lunch crew and pantry ensuring daily production deadlines are met while maintaining a work environment that is safe and free of injuries
- Ensures that kitchen staff always have the proper PPE and it is always in use, i.e. nonslip shoes, appropriate trousers, appropriate smock, face covering and face shield (when appropriate), hair net, hat or restraint and the use of gloves.
- Ensures all production areas conform to health and safety standards, product specifications, recipes, policies and procedures for all menu items and ingredients.
- Holds regular meetings with all food production staff and conducts routine inspection and evaluation of all kitchen operations including food presentation, quality, kitchen cleanliness and safety. Work with and maintain positive relationships with each staff and department leaders.
- Set new goals and create an action plan to achieve those goals. Communicate, execute and launch new menu or new menu items as directed by the Executive Chef.
- Train kitchen team on all recipes. Generate daily pulls list needed for the following days production. Thermometer calibration required every Monday morning at beginning of shift prior to starting your production or (whenever dropped or receiving a replacement).
- Work closely and collaborate with the Fleet and Facility teams to increase operating efficiency through maximizing productivity of staff, developing new procedures or streamlining processes encompassing all areas including food safety, food presentation, prep and cooking procedures, training and monitoring kitchen equipment for repairs needed.
- Must be innovative and have the ability to make suggestions for changes to the operation as needed to further improve the work environment and unit performance.
- Valid food handlers certification required.

SALARY / HOURS/BENEFITS: $72,000 – $82,000 annually. The position is full-time, salary, exempt and based on a 40 hour work week. Paid vacation and sick time are allowed and stated in the personnel manual. Health and dental insurance is paid by employer. Other optional fringe benefits are available in accordance with MOWSF personnel manual.
