Job description
Position Overview:
Foggy Bottoms Boys is seeking a skilled and dedicated Lead Pasteurizer and Ice Cream Maker to oversee the critical process of pasteurizing raw milk and crafting high-quality ice cream base mixes. This role plays a pivotal role in ensuring adherence to health and safety compliance standards, maintaining exceptional product quality, and providing leadership within the ice cream production team. The ideal candidate will have a strong background in food safety, dairy processing, and a passion for delivering outstanding ice cream products.
Compensation: Starting rate of $18/hr. Higher base and salary positions available based upon previous employment and management experience.
Responsibilities:
- Pasteurization and Ice Cream Base Preparation:
- Lead the pasteurization process, ensuring precise temperature and time control to achieve safe and high-quality dairy products.
- Skillfully incorporate ingredients to create ice cream base mixes, considering flavor profiles and product specifications.
- Collaborate with the team to determine batch sizes, ingredients, and production schedules to meet demand for soft serve, 3-gallon containers, gelato pans, and frozen pints.
- Quality Control and Product Development:
- Conduct thorough quality checks on raw milk and ingredients to ensure freshness and adherence to rigorous quality standards.
- Collaborate with the product development team to refine and create new ice cream flavors and recipes.
- Monitor the consistency, texture, and taste of ice cream base mixes to guarantee optimal product quality.
- Health and Safety Compliance:
- Maintain a deep understanding of health compliance regulations, sanitation protocols, and food safety guidelines.
- Implement and oversee rigorous procedures for the handling of milk bases, ingredients, and ice cream production equipment.
- Train and guide team members in proper food safety practices to maintain a safe and hygienic working environment.
- Team Leadership and Collaboration:
- Provide leadership to the ice cream production team, offering guidance, training, and support to ensure smooth operations and product consistency.
- Foster a collaborative and positive work atmosphere, encouraging teamwork and effective communication among team members.
- Production Management:
- Manage production schedules and coordinate tasks to ensure efficient utilization of resources and timely delivery of ice cream products.
- Oversee inventory management, including ingredient tracking and replenishment to prevent shortages.
- Documentation and Reporting:
- Maintain accurate records of pasteurization processes, ice cream base recipes, production schedules, and quality assessments.
- Communicate any deviations, challenges, or improvements to management in a timely manner.
Qualifications:
- Degree in Food Science, Dairy Science, or a related field is preferred; equivalent experience will also be considered.
- Extensive experience in dairy processing, including pasteurization and ice cream base formulation.
- Strong knowledge of health compliance regulations and food safety protocols.
- Exceptional attention to detail and ability to maintain consistent product quality.
- Leadership experience, with the ability to effectively guide and inspire a production team.
- Excellent organizational and time management skills to oversee complex production schedules.
- Strong problem-solving abilities and adaptability to address unexpected challenges.
- Clear and effective communication skills, both verbal and written.
- Flexibility to work varying shifts and adapt to changing production demands.
- Physical capability to stand, walk, lift heavy items, and work in a dairy production environment.
Compensation
this position is: hourly, varies DOE, $18.00 - $35.00
