Job description
Farm Club is looking for an Executive Chef to lead our kitchen. This person is responsible for menu development for the restaurant and the market, overseeing hiring, scheduling and management of kitchen staff, and tools for execution. In addition to menu development and staff management, the Executive Chef is responsible for identifying new revenue streams and opportunities for growth within existing programs. The chef works very closely with owner/farmer Nic Theisen to develop the menu, lead the preservation program and incorporate the harvest into all aspects of Farm Club.

Duties:
- Ensure the kitchen runs smoothly and efficiently while maintaining the collaborative and positive culture of the Farm Club kitchen.
- Through training, development, and mentorship of kitchen staff, ensure the maintenance of recipes, portion specifications, and standard preparation procedures for all dishes and ensure standards are being followed.
- Oversee vendor management & negotiation, invoice tracking, food cost management, labor cost management and inventory control.
- Analyzes weekly/daily menu item analysis to understand sales for both the dining room and market.
- Ensure all expense control/forecasting systems are in place with close monitoring of all department expenses including revenue to payroll ratio.
- Implement all Health Department requirements.
Compensation
this position is: salaried, $75,000 - $100,000
