Doppio Pasticceria is a Sicilian bakery in Baltimore, Maryland. We focus on regional dishes of southern Italy and specifically, Sicily and the greater Mediterranean. We mill most of the grain that we use in our baked goods, source ingredients at the weekly markets we attend, and focus on seasonal dishes. Our main offerings include arancini, sfincione, brioche, assorted cookies, and sandwiches made on house baked breads.
Sicilian cuisine is influenced by many empires of antiquity. Greek, North African, Roman, Turkish, Jewish and French influence (among others) show themselves in the recipes we make. We enjoy the large umbrella of Sicilian cuisine and appreciate the variety it offers.
We are driven to offer foods not often found in other bakeries in Baltimore. Instead, we focus on regionally specific recipes. Every component of these recipes is scratch made. We emphasize teamwork and supporting one another.
Job description
We are seeking a part time early morning baker willing to mill flour, prep and bake bread outside of service hours. This is a great opportunity to work with local whole grain at a small scale, scratch bakery. Because most of what is on our menu is not commonly found in other bakeries in Baltimore, this is a great opportunity to learn techniques outside of traditional french/modern American pastry. We scratch make everything, so you will learn about flour milling, cheese making, naturally leavened bread, lamination and classic Sicilian flavors and techniques.
Compensation
this position is: hourly, $20/hr +
