167 Hospitality Group is seeking a sous chef for 167 Raw Oyster Bar, a full service restaurant in Downtown Charleston, SC.

Restaurant hours: Monday - Saturday 11am - 11pm
167 Raw Oyster Bar’s menu serves seafood, with items of whole fish, caviar, raw bar, crudos, and sandwiches, including our signature lobster roll. 167 butchers whole fish in house, works with local farms for seasonal produce, and acquires high quality ingredients from all over the world.
167 Raw is seeking a sous chef to be well experienced with all kitchen stations, including garde manger, sauté, grill, fry and expeditor. 167 Raw's kitchen consists of 4- 5 cooks per service, working set stations. The sous chef would be scheduled for expo, a line station, or prep, with an emphasis on service shifts.
This is a leadership position, as 167's sous chefs are overseeing the team's skills and quality of work. Proper communication to the team on improvements and corrective actions for the kitchen is imperative in this position. The ability to employee manage and communicate is heavily expected.
The sous chef works with the head chef in aiding on menu development. 167 gives the opportunity for chefs to find creative outlets in the culinary world with featured dishes and seasonal menu changes.

Job Details
- Oversee staff arrivals, uniforms, and stations
- Set up station for service & prepare mis en place
- Check quality and consistency in food product
- Prepare or expedite tickets
- Communicate with team
- Ensure all stations are clean
- Replenish station items
- Clean kitchen, daily
- Write prep list & order sheets
- Collaborate on new dishes
- Provide input for overall improvements
Shift Availability
Lunch shift 9:00am - 5:00pm
Dinner shift 3:00pm - 11:30pm
Requirements
- Working 40 - 50 hours a week, 5 days a week
- High school diploma or equivalent
- 1 year, minimum management experience
- Professional reference and background checks
- Full availability and flexible schedule
- Able to stand for long periods of time
- Able to lift 50+ lbs
