Founded in 2004, Greene Grape is a neighborhood company deeply rooted in Fort Greene, Brooklyn, operating a wine & spirits shop and specialty food market called Greene Grape Provisions. Provisions carries high quality, sustainable food with an emphasis placed on sourcing locally wherever possible. A one-stop shop for our neighborhood's needs, our mission is to provide everyday food made with integrity, skill and pride.
Greene Grape Provisions is currently seeking an experienced culinary professional to be the Head of our Prepared Foods Department. We are looking for a creative kitchen pro who is community-oriented and trend-knowledgeable. Working directly with the Kitchen Manager, the Head of Prepared Foods will develop recipes for prepared food products, using ethically and locally sourced ingredients. They will be responsible for maintaining high quality and consistent food, as well as training staff, all the while providing stellar customer service. This role will require recipe writing experience and attention to detail. The Head of Prepared Foods will also create recipes to be featured in newsletters, on social media, and during in-store tastings, as well as grab-and-go lunch/dinner specials, and work with community outreach programs to share food knowledge. Reporting directly to the General Manager, the Head of Prepared Foods will ensure Department of Agriculture and NYCDOH compliance at all times, both in the kitchen and on the sales floor.
Other duties include, but are not limited to:
- Lead culinary training of kitchen team both BOH and FOH deli counter service
- Collaborate with Kitchen Manager to utilize overflow from the Butcher Counter & Produce Dept
- Work proactively to build and grow established Catering Department
- Communicate and work collaboratively with employees in all divisions of the Greene Grape, including Catering and Wine & Spirits, as needed
- Maintain a positive work attitude with a focus on problem solving and collaboration
- Teach and follow all food safety handling practices to ensure product safety and DOA compliance
- Supervise receiving of kitchen items, organization and maintenance of a clean work environment
- Maintain or improve established profit margins quarterly by managing and maintaining inventory of the kitchen and deli
- Cost out recipes to ensure product is maintaining margin requirements as set by General Manager
- Enforce proper product rotation utilizing FIFO while keeping shelves fully stocked and bountiful
- Handle all hiring, firing and scheduling needs of the department to ensure the department is fully staffed and operational at all times
- Evaluate department to implement improvements in all areas of kitchen operations, including sourcing, working with vendors, recipe development and costing
- Review weekly and YOY sales to take advantage of sales trends
- Communicate all staffing, maintenance, and equipment concerns to General Manager in a timely manner
- Attend and participate in Department Head meetings
- Demonstrate enthusiasm and a high energy level, and share that enthusiasm with others
- Adhere to and enforce all company policies as outlined in the Greene Grape Company Handbook
- Update menu seasonally to highlight locally grown and ethically sourced ingredients, while maintaining profit margins
- Conduct annual performance reviews with all team members, providing guidance on how to improve performance while also providing praise for positive work performance
- Work with Marketing team to highlight and publicize offerings to current and potential customers
Requirements:
- 5+ years culinary experience, including recipe testing and development
- Culinary Degree preferred
- NYC Food Handler’s License required
- Knowledge of NYC food scene and beyond
- Interest in and passion for gastronomy and sustainable food practices
- Able to lift up to 50 pounds
- Proven track record of successful DOH or DOA inspections
- Understanding of basic business functions such as HR, Finance, marketing etc.
- Proficient in Google Suite, Office, and basic data entry

- Annual Salary of $65,000

The Head of Prepared Foods reports directly to the GM. This position is a full time position with a minimum of 40-50h per week.
Compensation
this position is: salaried, $50,000 - $75,000
