Job description
The Prep Cook is responsible for supporting the Head Chef and Sous Chef in the day-to-day preparation, organization, and execution of Greene Grape Provision’s prepared foods program. Prep Cooks are expected to follow all safety, health, and regulatory guidelines as defined both internally and by the Department of Agriculture.
Key Responsibilities:
Work to sustain a positive, inclusive, work environment while following rules laid out in the company handbook
Refer to Head Chef/ Sous Chef at the start of the day to plan out ROS (Run of Show)
Maintain quality and consistency by following recipe standards & tasting product throughout the day
Follow FIFO (First in first out) with all food products
Maintain a clean workspace and organized kitchen
Assist with stocking and setting up the kitchen stations and retail food areas as directed
Wash and clean the kitchen and cooking utensils, storing equipment at the end of shift
Ensuring kitchen operation procedures and personal hygiene meet food safety standards and regulations
Receive daily deliveries with focus on ensuring invoice accuracy
Responsible for organization of all storage areas including walk-in refrigeration areas
Maintain punctuality and attendance
Requirements:
2+ years of relevant experience in the food handling and preparation
Willingness to work as a team member
Demonstrated passion for sustainable agriculture, small batch and artisan food production
Excellent communication skills, punctuality, and lack of ego
NYC Food Handlers License
Ability to lift 30 lbs and stand for extended periods of time
Flexibility in scheduling including nights, weekends and holidays
Benefits & Compensation:
Hourly wage $16.50-$20/hr, based on experience, with overtime for any hours worked over 40 weekly
